Peaches and Cream Baked Oatmeal is rich, creamy and delicious. Made with sweet peaches, rolled oats, coconut cream, spices and maple syrup. All baked together to make a comforting and wholesome dish. Perfect as a healthy and satisfying breakfast or snack. Great for meal prep too!

Peaches and Cream Baked Oatmeal

One of my favorite things about cooking and creating recipes is using in-season produce. It is so inspiring when seasonal fruits and vegetables come around. Peaches are one of my favorite summer fruits and they inspire me to create so many sweet and delicious recipes. Like these Peaches and Cream Overnight Oats and my Peach Raspberry Sorbet.

This Peaches and Cream Baked Oatmeal is rich, creamy and delicious. Made with sweet peaches, rolled oats, coconut cream, spices and maple syrup. All baked together to make a comforting and wholesome dish. Perfect as a healthy and satisfying breakfast or snack. Great for meal prep too as it is so easy and quick to prep and bake.

Ingredients needed to make Peaches and Cream Baked Oatmeal:

  • Old Fashioned Oats– Also known as rolled oats. Make sure they are certified gluten-free if you need them to be.
  • Peaches– Any kind of peaches will do. Just make sure they are pretty ripe as they will be sweeter.
  • Eggs– Binding agent.
  • Coconut Cream– You want to use canned full fat coconut cream.
  • Coconut Oil– Adds moisture and creaminess.
  • Spices– Vanilla extract, nutmeg, cinnamon, pink sea salt.
  • Baking Powder– Will help baked oatmeal rise at it bakes.
  • Maple Syrup– Adds more sweetness.

Equipment needed to make Peaches and Cream Baked Oatmeal:

  • 8×8 Baking Pan– You want to make sure you use a pan this size to make sure the oatmeal bakes evenly.
  • Parchment Paper– For lining baking pan. This will prevent the baked oatmeal from sticking to it and will make it easier to remove it from pan when it’s done baking.
  • Large Mixing Bowl– To prep all of the ingredients in.
  • Whisk– For whisking wet ingredients.
  • Spatula– To fold peaches into oatmeal mixture.

How to make Peaches and Cream Baked Oatmeal:

  • Step 1– Preheat oven at 350 degrees Fahrenheit. Line an 8×8 baking pan with parchment paper leaving sides sticking out. 
  • Step 2– Start by cutting around your peaches as close to the pit as possible. Dice into small cubes and set aside. 
  • Step 3– In a large mixing bowl crack 2 eggs. Then add in coconut oil, vanilla extract, nutmeg, cinnamon, pink sea salt, coconut cream and maple syrup. Whisk all ingredients together making sure everything is well combined. 
  • Step 4– Add in old fashioned oats and baking powder. Continue to whisk until oats are well combined with wet ingredients. Fold in diced peaches and stir to combine. You want to make sure that peaches are well incorporated into oats mixture. 
  • Step 5– Transfer oats mixture to prepped baking pan. Use a spatula to make sure the mixture is well spread around the pan. Even out the top of the oats making sure it’s at an even layer.
  • Step 6– Place oats in preheated oven and bake for 25 minutes. 
  • Step 7– Remove baked oatmeal from the oven and place on a cooling rack. Allow it to cool-down and set for 10-15 minutes. 
  • Step 8– Using the sides of parchment paper that are sticking out from the sides of the pan, lift baked oatmeal and remove from the pan. Place on a flat surface such as a counter or cutting board. Cut down into oatmeal three times vertically, then again three times horizontally. Making a 9 square grid. 
  • Step 9– Serve peaches and cream baked oatmeal warm as is or in a bowl with some milk. Enjoy!

Tips and Substitutions:

  1. Line baking pan with parchment paper- This will prevent oatmeal from sticking to the bottom. Also, leave enough paper sticking out on the sides. This will then make it a lot easier to pull oatmeal out of pan once it’s baked.
  2. Use the right size baking dish for this recipe- This will guarantee that the oatmeal will get baked thoroughly in the said time.
  3. Garnish your Peaches and Cream Baked Oatmeal– Take an extra peach and cut it into thin slices. Garnish the top before baking. When oatmeal is done, sprinkle with extra cinnamon for a prettier dish.
  4. Use ripe peaches– They will be sweeter making your oatmeal naturally sweet.
  5. No coconut oil?- Replace with olive oil or unsalted butter.
  6. No maple syrup?- Honey is a great substitute.

How to serve Peaches and Cream Baked Oatmeal:

I like removing my peaches and cream baked oatmeal from the baking dish and slicing it into 9 even squares. However, you can also simply scoop out as much oatmeal as you’d like and serve it in a bowl. You can eat your baked oatmeal as is or you can add some milk and eat it sort of like cereal. I like adding some almonds or pecans for some extra crunch.

Variations:

  1. Use any kind of peaches– Use any type of peaches you’d like or can easily find in your local grocery store or farmer’s market. White or yellow peaches are great. Nectarines work great too.
  2. Use other stone fruit– You can also use cherries, apricots, or plums.
  3. Turn baked oatmeal into oatmeal muffins– Line a 12-mold muffin tin pan and line with with muffin liners. Scoop mixture into each mold and bake. Turning these into individual muffins that can be easily enjoyed on-the-go.

Are baked oats healthy for you?

Yes. Baked oats are pretty healthy. They are rich in protein, fiber and complex carbs. They make for a nutrient-dense and wholesome breakfast or snack. These recipes usually have added fruit as well which adds to the nutritional value of the whole dish.

Why is my baked oatmeal gummy?

If your baked oatmeal is gummy is probably because you left it sitting too long before baking. Oatmeal can be very dry. As it sits it will absorb most the wet ingredients. Prep your oatmeal mixture and bake right after to prevent your oats from getting too dry and your baked oatmeal from getting gummy.

What’s the difference between baked oats and oatmeal?

The different between baked oats and oatmeal simply is the way the oats are prepared. As stated in its name, baked oatmeal is prepared with other ingredients and then baked. Traditional oatmeal is cooked with water and milk on stovetop or other gadgets like a pressure cooker.

Meal Prepping:

This Peaches and Cream Baked Oatmeal is prefect for meal prep. It is pretty easy and quick to prep and bake. It makes a pretty decent batch which means you will have ready to-go breakfast for a few days. If you are someone who leaves for work or school early, portion your baked oatmeal in different Tupperware. You will have your breakfast ready to go in the morning. Just pop it in the microwave for a minute if you like it warm.

Storing and Reheating:

Place your Peaches and Cream Baked Oatmeal in an airtight container. Keep it refrigerated for up to 3-5 days. To reheat, pop in the microwave for a few seconds to a minute. You can also reheat it by placing back in the oven for a couple of minutes.

Can you freeze Peaches and Cream Baked Oatmeal?

Yes. You can freeze this baked oatmeal. Place in a freezer friendly container. I do like to freezer my baked oatmeal in individual portions. This way I just defrost what I need. To defrost place in the fridge overnight to thaw-out. Reheat in the microwave or oven.
