It’s sweet, tangy with a hint of salty from the feta. It has the perfect crispiness from fresh watermelon and a burst of sweetness from plump blueberries. All tossed in a sweet and tangy balsamic dressing. It’s such a refreshing salad perfect to serve as a side dish at any summer barbecue. Not to mention how patriotic the colors are for the Fourth of July!

  • Blueberries– Ripe and sweet.
  • Balsamic Vinegar– Adds a tangy flavor to this salad.
  • Honey– Sweetness for balance.
  • Fresh Basil– Compliments to sweetness from the fruit and tanginess from the balsamic vinegar.
  • Fresh Mint– Adds freshness to this salad.

  • Step 1– In a medium mixing bowl, combine cubed watermelon and blueberries. Thinly chop basil and mint and add to bowl with watermelon and blueberries. 
  • Step 2– Drizzle balsamic and honey over fruit and herbs. Then sprinkle salt over everything. Add feta cheese an give salad a good toss making sure all ingredients are well combined. 
  • Step 3– Garnish salad with some fresh mint and basil if desired. Chill for 30 minutes then serve. Enjoy!

  3. Substitute for honey– Use maple syrup.

    No. I would’t recommend using frozen blueberries. They will release too much liquid as they thaw-out. Which will make the salad too soggy.

    How to pick a watermelon:

    1. Find the field spot- This is where the watermelon sat on the ground while it grew. Locate this spot and it should have a creamy and yellow color to it. If it’s white or light yellow, pick a different watermelon. 
    2. Tap it and listen If it makes a deep and hollow sound it’s a good indication that the watermelon has more water and it’s riper. Dense and dull sounds means the rind is too thick and not ripe enough. 
    3. Lift and feel how heavy it isThe watermelon should weight more than it’s size. This means the fruit is ripe and has more water.

    How to cut a watermelon:

    The easiest way to cut a watermelon is to slice it into inch thick circles. Start slicing each circle in half. You can then slice each half into triangles. If you want to dice it, slice the circles into long sticks. Cut off the skin and dice into cubes the size you’d like them to be.
