These Shrimp Skewers with Avocado Mango Salsa are a summer grilling staple. Made with perfectly seasoned shrimp, then topped with a delicious and refreshing avocado mango salsa. They are so juicy, flavorful and delicious.

Shrimp Skewers with Avocado Mango Salsa

It is so nice and exciting to be welcoming the warm weather up here in New England. Spring and summer are awesome because they allow us to do more outside activities here in the Northeast. My family and I personally love the beach. If we could go every day we would!

Another favorite of ours is grilling and having cookouts. I love cookout food! Burgers, skewers, corn on the cob, potato salad, pasta salad, fresh fruit, etc. You get the picture! Grilling season has officially started for us in our home.

I made my Shrimp Skewers with Avocado Mango Salsa the other night and will continue making these all summer long. They’re perfect to bring to every family cookout. The shrimp marinades in lime and spices making them so flavorful. The salsa is so fresh and refreshing making it the perfect addition to your summer dishes.

Do you peel shrimp before grilling?

To make your skewers and grill your shrimp you will want to peel the shrimp first. This will make it easier to thread onto the sticks. Leave tails on however since that will make your shrimp more flavorful. Rub a bit of oil on the skewers to prevent them from sticking to the grill.

How long should I cook shrimp for?

Like most seafood, shrimp cooks very fast. Leave it on grill for no more than 2-3 minutes on each side. Depending on how fast your grill cooks, you may want to leave it on for less or more time. Once the shrimp starts to opaque and turns pink it means it’s done. Make sure not to overcook your shrimp! The texture and taste will completely change.

What you need to make these Shrimp Skewers with Avocado Mango Salsa:

Ingredients:

  • Shrimp
  • Lime
  • Pink Salt
  • Black Pepper
  • Garlic Powder
  • Paprika
  • Mango
  • Avocado
  • Red Onion
  • Cucumber
  • Jalapeño
  • Roma Tomato
  • Cilantro

Equipment:

  • Skewer Sticks
  • Grill
  • Mixing Bowls

How to make Shrimp Skewers with Avocado Mango Salsa:

  1. Preheat grill on medium-high heat.
  2. Place your shrimp in a large bowl and pat dry. Drizzle shrimp with olive oil, lime juice, sprinkle pink salt, black pepper, garlic powder and paprika. Stir shrimp making sure it’s well coated with oil, lime juice and spices. 
  3. Start assembling skewers using skewer sticks and sticking about 5 shrimp per stick. If you’re using wooden sticks remember to soak them for at least an hour before assembling skewers. 
  4. Grill your skewers on medium-high heat until shrimp starts to turn pink and opaque. About 2-3 minutes per side. Remove from grill and set to the side.
  5. Dice mango and avocado and place in a large bowl. Toss in the rest of diced ingredients; red onions, cucumber, jalapeño, and tomato. Toss in chopped cilantro, drizzle lime juice, sprinkle pink salt, black pepper and garlic powder. Stir well making sure all the ingredients are well combined. 
  6. Serve shrimp skewers with avocado mango salsa. Enjoy!

Tips to making your Shrimp Skewers with Avocado Mango Salsa:

  1. Submerge skewer sticks in water and leave them there for a few minutes to soak– This will prevent sticks from getting burnt when grilling.
  2. Rub some olive oil (or oil of choice) on both sides of skewers– This way the shrimp and veggies don’t stick to the grill.
  3. Turn on grill ahead of time and allow it to preheat for 10 minutes– This will also keep food from sticking to the grill.
  4. Like any other seafood, shrimp cooks very fast– Careful to not overcook as shrimp will get a rubbery texture if it does.
  5. When making your Avocado Mango Salsa, save the pit of the avocado- Keep the pit in the salsa and remove when serving. Leaving the pit with the diced avocado will prevent it from browning for a while.

Ingredients

Shrimp Skewers

  • 1 lb shrimp (peeled and deveined)
  • 1 tbsp extra virgin olive oil
  • 1 lime (about 2-3 tbsp lime juice)
  • 1 tsp pink salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp paprika

Avocado Mango Salsa

  • 1 mango
  • 1 avocado
  • 1/4 cup diced red onion
  • 1/2 cup diced cucumber
  • 1 seeded and diced jalapeño pepper
  • 1 diced Roma tomato
  • 2 tbsp chopped cilantro
  • 1 lime (about 2-3 tbsp lime juice)
  • 1 tsp pink salt (more to taste)
  • 1/2 tsp black pepper (more to taste)
  • 1 tsp garlic powder

    Im allergic to shrimp but I would definitely go for mango avocado salad! Thanks for the recipe!

    1. Oh no! My grandfather is allergic to all shellfish too. He can’t even smell it! At least you can have the salsa! It’s delcious and you can have it with chicken or fish too!
