Watermelon Blueberry Salad with Feta is the ultimate summer salad and side dish. Made with fresh and juicy watermelon, plump and sweet blueberries, crumbled feta, and fresh mint and basil. All tossed in a sweet and tangy balsamic dressing.

Ingredients

  • 2 cups cubes watermelon
  • 1 cup fresh blueberries
  • 2 tsp balsamic vinegar
  • 1 tsp honey
  • 1 tbsp fresh basil
  • 1 tsp fresh mint
  • 1/4 tsp pink sea salt
  • 1/4 cup feta

Instructions

  1. In a medium mixing bowl, combine cubed watermelon and blueberries. Thinly chop basil and mint and add to bowl with watermelon and blueberries.
  2. Drizzle balsamic and honey over fruit and herbs. Then sprinkle salt over everything. Add feta cheese an give salad a good toss making sure all ingredients are well combined.

  3. Garnish salad with some fresh mint and basil if desired. Chill for 30 minutes then serve. Enjoy!

Recipe Notes

    1. Use ripe and juicy fruit- This will make the salad more flavorful and prevent it from becoming soggy.
    2. Add salad to a salad spinner- If you are making this salad a few hours ahead of serving it; place it in a salad spinner. The juices will drain through the spinner into the bowl keeping the fruit more crips and fresh. Add the juices back to the salad hen you are ready to serve.
    3. Substitute for honey- Use maple syrup.
    4. Substitute for feta cheese- Cojita cheese is a great substitute.
