Cucumber Herb Salad is the best refreshing salad to serve this summer. Made with crisp cucumbers and fresh herbs (dill, parsley, and mint) that perfectly compliment each other. So easy and simple to throw together and pairs up with just about everything!

Now that summer is here, the abundance of cucumbers and fresh herbs is at full force. What’s the best thing to make with all of those cucumbers and herbs? This refreshing and delicious Cucumber Herb Salad. It’s so packed in fresh flavors and perfect to serve at any barbecue all summer long. This salad is so easy and quick to throw together. We love how it pairs up with just about everything!

Ingredients needed to make Cucumber Herb Salad:

  • English Cucumbers– I also like using Persian cucumbers for this salad.
  • Fresh Herbs– Fresh dill, parsley, fresh mint.
  • For the Dressing– Extra virgin olive oil, lemon juice, pink sea salt, black pepper, garlic powder, honey.

Equipment needed to make Cucumber Herb Salad:

  • Large Mixing Bowl– For combining and tossing the salad in.
  • Whisk– For whisking the dressing.

How to make Cucumber Herb Salad:

  • Step 1– Thinly chop dill, parsley and mint. Add to a large mixing bowl and sprinkle with salt, pepper, garlic powder, olive oil, drizzle lemon juice, and honey. Lightly whisk all together. 
  • Step 2– Slice cucumbers into thin circles and add to mixing bowl with fresh herb dressing. Toss cucumbers and herbs making sure they are well coated with the dressing. 
  • Step 3– You can serve immediately, however I prefer to chill it in the fridge for at least a couple of hours before hand. Serve and enjoy!

Tips and Substitutions:

  1. Slice cucumbers very thinly- The thinner the cucumber slices, the better this salad is.
  2. Chill salad in the fridge for at least a couple of hours before serving- The longer this cucumber herb salad is refrigerated, the more it marinades resulting in more concentrated and refreshing flavors.
  3. Switch up your herbs- You can use other herbs you may have in hand like fresh cilantro, basil or oregano.
  4. Substitute for honey- Use maple syrup and this will also make this salad vegan friendly.

This salad is so refreshing and can be served with just about anything. It’s perfect to serve at any summer barbecue and it’s great when paired with grilled food. We love it with grilled steaks, chicken, fish, burgers, etc.

Variations:

  • Add more veggies– Add cherry tomatoes and sliced red onions for a pop of color.
  • Sprinkle some cheese– Add some crumbled feta cheese for a cheesy salad.
  • Add some spice– Sprinkle some red pepper flakes or add some sliced jalapeños for a bit of a flare.
  • Make it creamy– Add a bit of plain greek yogurt for a creamy version.
  • Add pickled red onions– Will add even more flavor and crunch!

What kind of cucumbers are best?

You can really use any kind of cumbers for this salad. My go-to cucumbers for this specific salad are English cucumbers or Persian cucumbers. If you are using larger cucumbers I would suggest cutting them onto half moons and thinly slicing so that they easier to bite.

Do I need to peel the cucumber?

No. You do not need to peel the cucumbers at all. Especially of you are using English or Persian cucumbers. If you are using larger cucumbers that tend to have a thicker skin, you can certainly peel them of you desire.

Can you make Cucumber Herb Salad ahead of time?

This cucumber herb salad is best when served right away or within a few hours after making it. If you wish to make it in advance, slice your cucumbers and make your dressing. Don’t add the dressing to the cucumbers until you are ready to serve the salad.

Storing Cucumber Herb Salad:

If you have some leftover cucumber salad store it in an airtight container. Keep it refrigerated for up to 1-2 days at the most. A good tip to keep the salad fresh is to serve it in a salad spinner. This way the juices will drain from the cucumbers. Preventing them from getting too soggy. When ready to serve, add the juices back to the cucumber and toss.
