Blackberry-Strawberry Popsicles

One of the best things about summer is all the fresh produce around. Summer fruits and veggies are in abundance and the possibilities are truly endless. One of our favorite things to do with all the fresh fruit during the summer time is to make homemade popsicles. Homemade popsicles are a much better option to homemade as you can control exactly what goes in them. No additives, food coloring, refined sugars, or any other harmful chemicals.

These Blackberry-Strawberry Popsicles are one of our personal favorite homemade frozen treats during the summer time. These popsicles are the perfect healthy frozen treat to indulge in this season. They are sweet, flavorful, fresh and super refreshing. They come together in no-time and with little effort. Made with just fresh strawberries, blackberries, basil, honey and coconut water. Make these popsicles all summer long.

Ingredients needed to make Blackberry-Strawberry Popsicles:

  • Strawberries– Use ripe strawberries for sweeter popsicles.
  • Blackberries– Go for ripe blackberries too. Save some extra blackberries to add whole to your popsicles for a pop of color.
  • Coconut Water– Makes these popsicles so refreshing.
  • Fresh Basil– Adds freshness and flavor to these popsicles.
  • Honey– For sweetness.

Equipment needed to make Blackberry-Strawberry Popsicles:

  • Blender– To puree all the ingredients together.
  • Popsicle Molds– I prefer using silicone ones as it makes it so easy to pop the popsicles right out once they are frozen.
  • Popsicle Sticks– I use classic wooden ones.

How to make Blackberry-Strawberry Popsicles:

  • Step 1– Remove stems from strawberries and slice into halves. Measure out 2 cups and place in blender. Add in rest of ingredients; 1/2 cup of blackberries, coconut water, fresh basil, and honey. Blend on high for 30-60 seconds until well blended together. 
  • Step 2– Evenly distribute the other 1/2 cup of blackberries into a 10 popsicle mold. If you have more blackberries add a few more. I personally like to add about 3-4 blackberries per mold, it makes the popsicles look prettier. 
  • Step 3– Evenly pour in blackberry-strawberry mixture into each mold. Cover the mold with its top then stick popsicle sticks into each mold. Place popsicles in the freezer for at least 6 hours or preferably overnight.
  • Step 4– Remove popsicles from the freezer and remove from mold. If it’s too hard for the popsicles to come out, run under warm water for a few seconds and that should loosen up the popsicles enough to pop right out of the molds. Keep any leftover popsicles frozen for up to 4-6 months. Enjoy!

Tips and Substitutions:

  1. Use silicone popsicle molds- These make it so easy to pop the popsicles out once they are frozen.
  2. Use ripe fruit- Ripe fruit build up more sugar making it sweeter which will also make your popsicles a bit sweeter without having to add any sweeteners.
  3. Use other berries- Try making these with raspberries or blueberries too.

Variations:

  1. Make them creamy– Mix these with some plain greek yogurt for creamy fruity popsicles.
  2. Swap basil for mint– For a fresher taste, add mint to these.
  3. Use other berries– Mix and match between blackberries/strawberries and raspberries/blueberries.

How long does it take for Blackberry-Strawberry popsicles to freeze?

For these popsicles to get fully frozen and to smoothly come out the popsicle molds, it will take at least 6 hours. For best result is best to allow them to freeze overnight.

Are these popsicles healthy?

Yes. These What blackberry-strawberry popsicles are super healthy. They are made with fresh fruit, coconut water, and honey as a natural sweetener. If you use ripe fruit they will be sweeter without having to add more honey. The riper the fruit, the sweeter it is.

What makes popsicles softer than ice?

Sugar helps keep ice crystal formation small, which makes for a softer texture. The natural sugar from the fruit and added honey allows these popsicles to freeze with a softer texture and not get too icy.

Storing Blackberry-Strawberry Popsicles:

You can keep your blackberry-strawberry popsicles in the popsicle mold you made them in. You can also remove them from the mold and place each popsicle in a popsicle bag. Keep popsicles frozen for up to 4-6 months.

Ingredients
