Blackberry-Strawberry Popsicles

These Blackberry-Strawberry Popsicles are the perfect healthy frozen treat to indulge in this summer. They are sweet, flavorful, fresh and super refreshing. They come together in no-time and with little effort. Made with just fresh strawberries, blackberries, basil, honey and coconut water. Make these popsicles all summer long!

Ingredients

  • 2 cups sliced strawberries
  • 1 cup blackberries (divided into 1/2 cups)
  • 1 cup coconut water
  • 2 tsp fresh basil
  • 1 tbsp honey

Instructions

  1. Remove stems from strawberries and slice into halves. Measure out 2 cups and place in blender. Add in rest of ingredients; 1/2 cup of blackberries, coconut water, fresh basil, and honey. Blend on high for 30-60 seconds until well blended together.

  2. Evenly distribute the other 1/2 cup of blackberries into a 10 popsicle mold. If you have more blackberries add a few more. I personally like to add about 3-4 blackberries per mold, it makes the popsicles look prettier.

  3. Evenly pour in blackberry-strawberry mixture into each mold. Cover the mold with its top then stick popsicle sticks into each mold. Place popsicles in the freezer for at least 6 hours or preferably overnight.

  4. Remove popsicles from the freezer and remove from mold. If it's too hard for the popsicles to come out, run under warm water for a few seconds and that should loosen up the popsicles enough to pop right out of the molds. Keep any leftover popsicles frozen for up to 4-6 months. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Use silicone popsicle molds- These make it so easy to pop the popsicles out once they are frozen.
    2. Use ripe fruit- Ripe fruit build up more sugar making it sweeter which will also make your popsicles a bit sweeter without having to add any sweeteners.
    3. Use other berries- Try making these with raspberries or blueberries too.
