Red Pepper Cheddar Egg Bites are loaded with flavor, protein, and are great for meal prep. These egg bites are perfect for everyone in the family. They’re made with eggs, red bell peppers, and cheddar cheese. They make a healthy on-the-go breakfast, snack, and are even great for school lunchboxes.

Red Pepper Cheddar Egg Bites

Red Pepper Cheddar Egg Bites are so cheesy, flavorful and loaded with protein. They make for a healthy on-the-go breakfast, snack, toddler’s lunch, and are even great for school lunchboxes. Perfect for meal prep as they are so easy to make and make a big batch.

These egg bites only call for a few ingredients and come together in about 30 minutes. Make ahead and have in the fridge ready for whatever you need them for. They are perfect for everyone in the family and they are all sure to love them.

Ingredients needed to make Red Pepper Cheddar Egg Bites:

  • Eggs– Use large eggs.
  • Red Bell Pepper– You can also use yellow or orange bell peppers. Sweet peppers work too. 
  • Cheddar Cheese– Use fresh shredded cheddar cheese. 
  • Spices and Herbs– Pink sea salt, black pepper, garlic powder, and paprika.
  • Unsweetened Almond Milk– Or any milk of choice. 
  • Baking Powder– Will help egg bites rise. 
  • Avocado or Coconut Oil– To grease muffin pan.

Equipment needed to make Red Pepper Cheddar Egg Bites:

  • 24 Mold-Mini Muffin Pan– Use a mini silicone muffin pan if possible. It makes it much easier to remove egg bites once they’re done. 
  • Liquid Measuring Cup– Makes it easier to pour whisked eggs into muffin pan and makes it less messy. 
  • Whisk– To whisk eggs. 
  • Large Mixing Bowl– To crack eggs into and whisk.

How to make Red Pepper Cheddar Egg Bites:

  • Step 1– Preheat oven at 350 degrees Fahrenheit. 
  • Step 2– Prep all your ingredients; Thinly dice red bell pepper. Crack eggs into a large mixing bowl, sprinkle salt, black pepper, garlic powder, paprika, and baking powder, and pour in milk. Whisk together until well combined. Add whisked eggs to a liquid measuring cup. 
  • Step 3– Grease a 24 mold-mini muffin pan (preferably silicone) with a bit of oil of choice (I like to use avocado or coconut). Divide diced red bell pepper and grated cheese throughout each mini muffin mold. Divide them as even as possible. Pour whisked eggs into each muffin pan. Fill it about a third of the way up. Don’t fill pan with eggs to the top. The eggs will rise and can overflow as they bake. 
  • Step 4– Place egg bites in oven and bake for 25 minutes. 
  • Step 5– Remove pan from the oven and allow bites to cool down for 10-15 minutes. Pop them out of muffin pan. Serve immediately or place in an airtight container once thet have competely cooled-off. Keep in the fridge for up to 5 days or freeze for up to 3 months. Enjoy!

Tips and Substitutions:

  1. Preferably use a silicone mini muffin pan- It makes it so much easier for egg bites to bake in these kind of pans. It’s also very easy to pop the egg bites right out after they are done baking.
  2. If you are using a silicone muffin pan, place it over a baking sheet pan- Silicone pans are very flimsy making it hard to transfer from the counter to the oven. Place it over a baking sheet pan for easier use.
  3. Fill muffin molds about a third of the way up- Don’t fill molds with eggs all the way to the top. The eggs will rise and can overflow as they bake.
  4. Switch up your bell peppers- You can use other colored bell peppers if you have them. Orange, yellow or green are all perfectly fine to use in this recipe. Sweet peppers work well too.
  5. Add more veggies- You can get creative and add other veggies or substitute bell pepper for other veggies too. Use baby spinach, mushrooms, zucchini, carrots, kale, etc.

  • Use dairy-free cheese to make these dairy-free egg bites.
  • Feel free to add more spices and herbs like red pepper flakes for a kick, oregano, parsley, onion powder, etc.
