Frozen Yogurt Berry Cups

Healthy snacking these days can be pretty easy. There are endless ways to turn healthy foods into delicious snacks. Chickpeas into crunchy chickpeas with different flavors, kale into chips, oats into energy balls, and even beans into brownie bites or cookie dough bites.

Yogurt is a very versatile food you can use in many recipes to make a quick and healthy snack. I always use Plain Greek Yogurt at home since it has more protein than regular yogurt and it is easier to digest. I often like to use yogurt to make chia pudding, parfaits, or frozen cups. These Frozen Yogurt Berry Cups are one of my go-to snacks to make using yogurt. They are super healthy and very easy to make.

Aside from Greek yogurt which is loaded with protein and probiotics, they are made with berries which are rich in vitamins and minerals. They also contain almonds which are a great source of protein and healthy fats. These frozen cups are perfect for toddlers and kids to snack on. They’re also great for babies who are teething to help soothe them while enjoying a tasty treat.

I love to make these for the Fourth of July as they are just so patriotic looking. You can use silicone liners to make them and they easily pop out once frozen. To make them even more festive for the upcoming holiday use star shaped silicone muffin liners. They look so cute and perfect for the Fourth.

Ingredients needed to make Frozen Yogurt Berry Cups:

  • Plain Greek Yogurt– You can use flavored too like vanilla if you prefer.
  • Fresh Fruit– Blueberries and Raspberries.
  • Crushed Almonds– Adds some crunch to the berry cups.
  • Maple Syrup– Adds sweetness.

Equipment needed to make Frozen Yogurt Berry Cups:

  • Silicone Muffin Liners or Silicone Muffin Pan– You want to use silicone because it makes it easier to pop the frozen yogurt berry cups. If you use parchment or paper muffin liners, they could stick to the cups.
  • Large Mixing Bowl– For mixing all if the ingredients.
  • Large Baking Sheet Pan– To place the silicone muffin liners or muffin pan. This makes it easier to transfer to the freezer.

How to make Frozen Yogurt Berry Cups:

  • Step 1– In a large mixing bowl start by whisking together Greek yogurt and maple syrup. Fold in blueberries, raspberries and crushed almonds.
  • Step 2– Place 10 silicone muffin liners on a large baking sheet pan. Use a spoon to scoop yogurt mix into each silicone muffin liner. Filling up all the way to the top of each mold. Use the back of spoon to smooth out the top of the cups. Garnish with more blueberries and raspberries if desired.
  • Step 3– Place yogurt cups while still on baking sheet pan in the freezer for 4-6 hours (preferably overnight) until completely frozen.
  • Step 4– Remove frozen yogurt berry cups from the freezer. Pop out of muffin liners and place in a freezer bag or any freezer friendly container. Enjoy one right away and keep any other yogurt cups in the freezer for 4-6 months.

Tips and Substitutions:

  1. Use Silicone Muffin Liners or Silicone Muffin Pan– You want to use silicone because it makes it easier to pop the frozen yogurt berry cups. If you use parchment or paper muffin liners, they could stick to the cups.
  2. Use flavored Greek yogurt– If you want to add more flavor, vanilla, strawberry, banana, or berry are all great.
  3. Switch up your berries– Substitute blueberries and raspberries (or add) for strawberries or blackberries. Bananas are also great!
  4. If you have whole almonds– Measure 1/3 cup and then put them through food processor. You can also put them in a bag and roll them with a rolling pin.
  5. Use other nuts– Pecans, pistachios, and walnuts are all great.
  6. Substitute for maple syrup– You can sue honey. If your yogurt is sweet enough, you can skip adding a sweetener all together.

Variations:

  • Add more protein– Add a scoop or two of protein powder or collagen peptides.
  • Make them chocolate– Add 1-2 tablespoons of cocoa powder to the mix to make them chocolate. Add some chocolate chips too!
  • Add nut butter- Add 1-2 tablespoons of almond or peanut butter. Adds flavor, texture and more protein.
  • Make them parfait frozen yogurt cups– Sprinkle in some granola. Either homemade or store-bought.
  • Coconut flakes– Sprinkle in some coconut flakes for a nice crunch and texture.
