Blueberry-Hibiscus Chia Drink

This Blueberry-Hibiscus Chia Drink is super refreshing and actually makes for a pretty great snack. Made with fresh blueberries, refreshing hibiscus tea, chia seeds, and a bit of maple syrup for some sweetness. This Chia water is nourishing and highly nutritious. It's sweet, smooth, the perfect thirst quencher on any hot summer day!

Ingredients

  • 2 cup blueberries
  • 2 cups hibiscus tea (make tea according to instructions using two tea bags per cup of water)
  • 3 tbsp chia seeds
  • 1 cup water
  • 1 tsp maple syrup (more or less to taste depending on how sweet you'd like your drink)

Instructions

  1. Combine water with chia seeds in a large wide mouth mason jar. Tightly seal jar and give it a good shake. Refrigerate overnight. 

  2. The next day, puree blueberries and strain until you get about 2/3- 1 cup of liquid and pulp is almost fully dry. Make tea according to package instructions and allow to cool off. 

  3. Remove chia from fridge and add in tea, blueberries, and maple syrup. Tightly seal mason jar and give it a good shake.

  4. Allow to chill for a few minutes. Serve and enjoy!

Recipe Notes

Tips and Substitutions:

  1. Use a large wide mouth mason jar to make your chia water- You can combine all of the ingredients in this jar, it has plenty of room and the tight lid will keep your chia water fresh. If you don’t have this kind of jar, use any container that has an airtight lid. 
  2. Substitute for maple syrup- You can use honey.
  3. Allow chia seeds to refrigerate in coconut water overnight- This will give the chia seeds plenty of time to expand. However, if you don’t want to wait that long, give it at least 2 hours in the fridge.
  4. Make tea according to instructions- Follow these instructions using two tea bags per cup of water.
