Ingredients

Fruit Salad

  • 2 cups sliced strawberries
  • 3 mangoes
  • 4 kiwis
  • 1 cup diced pineapple
  • 1 cup blueberries

Honey-Lemon Dressing

  • 2 tbsp honey
  • 1/4 cup lemon juice
  • 1/8 tsp pink salt
  • 1 tbsp hemp hearts

Instructions

  1. Peel and dice mangoes into about 1/4 inch cubes. Peel kiwis and cut in half lengthwise. Then slice each half into thick slices. Slice strawberries into fourths and measure out 2 cups. Dice pineapple into small cubes and measure out 1 cup.

  2. In a large mixing bowl start layering fruit; Place pineapple, strawberries, kiwi, mango, and blueberries all lined up next to each other around the bowl. Cover fruit with saran wrap and place salad in the fridge. Allow fruit salad to chill in the fridge for at least an hour before serving.

  3. While fruit salad chills, make dressing; In a small mixing bowl whisk together honey, lemon and salt. Stir in hemp hearts and combine with dressing well. Refrigerate until ready to serve.

  4. When ready to serve, remove fruit salad from the fridge and remove saran wrap. Remove dressing from fridge and drizzle over salad. Toss salad making sure fruit is well coated with dressing. Serve immediately and enjoy!

Recipe Notes

Tips to making Fruit Salad:

  1. Be sure to use ripe and firm fruit- This fruit will last longer in the fridge.
  2. Don't add dressing to salad until ready to serve- As fruit sits, it releases more juice. Adding the dressing ahead will increase the juice even more. Wait until ready to serve to add dressing then.
  3. Let fruit salad sit in a salad spinner basket- This will drain the extra juice and keep fruit crisp. Add juice back to salad when ready to serve.

Easy Substitutions/Additions that can be made:

  1. Peaches- are a great addition to this Fruit Salad. Add as another fruit for more sweetness and flavor.
  2. Maple Syrup- can be used as a substitute to honey.
  3. Hemp hearts- substitute with poppy seeds or chia seeds.
  4. Sliced Almonds are a great addition for more crunch.
  5. Need to substitute any of the fruits?- Apples, mandarins, cherries, or grapes would work.
