This Chocolate Chip Skillet Cookie takes dessert to a whole other level. Easily make this popular and trendy sweet right from the comfort of your own home. Made with almond flour, coconut sugar, maple syrup, and dark chocolate chips. Top with a scoop of ice cream that will melt right into this mushy, gooey, chocolaty goodness.
Start by melting 2 tablespoons of unsalted butter by microwaving it in increments of 30 seconds until completely melted. In a large mixing bowl, combine egg, melted butter, maple syrup, coconut sugar and vanilla extract. Whisk together until well combined.
Toss in almond flour, baking powder, pink sea salt, cinnamon, and nutmeg. Whisk until dough is formed and all ingredients are combined well. Fold in chocolate morsels. Cover bowl with saran wrap and refrigerate for 1 hour to chill dough.
Right before the hour is up and you're ready to bake your skillet cookie, preheat oven at 350 degrees F.
Grease a 6.5 inch cast iron skillet with a bit of butter or coconut oil. Add chilled dough to greased skillet. Using your hands, spread dough evenly pressing down throughout the skillet.
Place cookie in oven and bake for 22 minutes.
Remove skillet cookie from oven and serve immediately right in the skillet (be carfeful not to touch the skillet right out the oven). You can serve with a scoop of your preferred "nice cream" or ice cream if desired. Enjoy!
