Ingredients

  • 1 can 13.5 oz unsweetened coconut milk (full fat)
  • 1/2 cups dark semi-sweet chocolate chips
  • 1 tbsp cacao powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 scoop collagen peptides

Instructions

  1. In a medium sauce pan, pour coconut milk and place on stovetop on low heat. Add chocolate chips, cacao powder, maple syrup, vanilla extract, and collagen peptides. Whisk together as chocolate chips melt and all ingredients start to dissolve and mix together. Continue to simmer for 5 minutes whisking occasionally. Make sure none of the melted chocolate is sticking to the bottom of the pot.

  2. Pour mixture into a measuring cup and let it sit until it completely cools-off. After sitting for a few minutes coconut fat may start to set and break apart from liquid. Stir mixture to make sure it's well combined. Pour into popsicle molds then place popsicle sticks in them. Freeze for at least 6-8 hours. Preferably overnight.

  3. Remove fudgsicles from the freezer and let them sit for 10-15 minutes so that they can get a bit soft and you can easily take them out of the molds. You can also fill a large bowl with warm water and submerge the bottom of the mold into the water for a few seconds to soften fudgsicles. Keep fudgsicles in the freezer for up to 6 months.
