Cucumber Herb Salad

Cucumber Herb Salad is the best refreshing salad to serve this summer. Made with crisp cucumbers and fresh herbs (dill, parsley, and mint) that perfectly compliment each other. So easy and simple to throw together and pairs up with just about everything!

Ingredients

  • 2 English cucumbers
  • 3 tbsp fresh dill
  • 3 tbsp fresh parsley
  • 2 tbsp fresh mint
  • 1 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp honey

Instructions

  1. Thinly chop dill, parsley and mint. Add to a large mixing bowl and sprinkle with salt, pepper, garlic powder, olive oil, drizzle lemon juice, and honey. Lightly whisk all together.

  2. Slice cucumbers into thin circles and add to mixing bowl with fresh herb dressing. Toss cucumbers and herbs making sure they are well coated with the dressing.

  3. You can serve immediately, however I prefer to chill it in the fridge for at least a couple of hours before hand. Serve and enjoy!

Tips and Substitutions:

  1. Slice cucumbers very thinly- The thinner the cucumber slices, the better this salad is.
  2. Chill salad in the fridge for at least a couple of hours before serving- The longer this cucumber herb salad is refrigerated, the more it marinades resulting in more concentrated and refreshing flavors.
  3. Switch up your herbs- You can use other herbs you may have in hand like fresh cilantro, basil or oregano.
  4. Substitute for honey- Use maple syrup and this will also make this salad vegan friendly.
