Thinly chop dill, parsley and mint. Add to a large mixing bowl and sprinkle with salt, pepper, garlic powder, olive oil, drizzle lemon juice, and honey. Lightly whisk all together.
Slice cucumbers into thin circles and add to mixing bowl with fresh herb dressing. Toss cucumbers and herbs making sure they are well coated with the dressing.
You can serve immediately, however I prefer to chill it in the fridge for at least a couple of hours before hand. Serve and enjoy!
