If you are a shrimp lover like me then you will for sure love these Shrimp Fajitas. They are incredibly easy to make and pack so much flavor. These mouth-watering fajitas are so fresh and fiery. Ready to be served with warm crispy tortillas.
These Shrimp Fajitas come together is no time. They are perfect for a quick weeknight dinner as they are a one-skillet meal. They’re great for a day that you don’t have much time to cook and just want to whip something up together.
I love how versatile these flavorful and delicious fajitas are. Serve them over some warm tortillas and top with fresh cilantro, avocado slices, and a squeeze of lime juice. My favorite way to serve them is as a fajita bowl. Serve over warm rice, and top with fresh guacamole, corn and black beans. Or get creative and serve them any way you prefer!
What you need to make this recipe:
Ingredients:
- Shrimp
- Bell Peppers
- Yellow Onion
- Fresh Cilantro
- Lime Juice
- Garlic
- Pink Salt
- Black Pepper
- Paprika
- Cumin
- Tortillas (gluten-free, whote wheat, etc.)
- Lemon wedges
- Avocado slices
Equipment:
- Large Cast Iron Skillet
- Large Mixing Bowls
- Small Mixing Bowl
- Tong
- Whisk
How to make Shrimp Fajitas:
- Start by prepping veggies; Slice bell peppers in half and remove top and seeds. Peel onion and garlic. Julienne bell peppers, cut onion in half and slice, and press garlic cloves. Chop cilantro and measure out 1/4 cup.
- Place prepped bell peppers and onions in a large mixing bowl. Place shrimp in a seperate large mixing bowl and dab dry.
- In a small mixing bowl whisk together marinade ingredients; avocado oil, lime juice, pressed garlic, pink salt, black pepper, paprika, and cumin. Pour half of the marinade on veggies and the other half over shrimp. Toss both veggies and shrimp making sure each are well coated with marinade.
- Place a large cast iron skillet on stovetop and drizzle with 1 tablespoon olive oil. Bring to a heat on medium-high heat. Place shrimp on heated skillet spacing them out. Cook shrimp for 1-2 minutes until they turn pink and opaque. Using tongs, flip shrimp over and cook on the other side for another 1-2 minutes. Remove cooked shrimp from skillet and place in a clean large bowl. Keep warm.
- Drizzle the second tablespoon of olive oil over skillet. Bring to a heat once again on medium-high heat. Toss in bell peppers and onions and sauté until veggies start to soften, About 3-5 minutes.
- Return cooked shrimp to skillet along with juices and stir in with cooked fajitas. Sprinkle fresh cilantro and drizzle fresh lemon juice. Give fajitas a good toss. Turn heat off and remove fajitas from stovetop.
- Turn stove flame on medium heat and place tortilla directly on the flame. Warm for 30-40 seconds. Flip over and repeat. Repeat with the rest of tortillas to warm up.
- Place tortillas on a plate or flat surface and add shrimp fajitas over them. Add avocado slice and garnish with chopped cilantro and lemon wedge. Serve warm.
Tips for making Shrimp Fajitas:
- Stay close to shrimp while it’s cooking- You do not want to overcook your shrimp. Shrimp can very easily overcook which results in rubbery and chewy shrimp. Make sure you don’t cook it over 1-2 minutes per side. You will know your shrimp is cooked once it turns pink and opaque.
- Prep all ingredients ahead- The ingredients cook pretty quickly so you want to make sure everything is prepped and ready to toss into the skillet once you start cooking.
- Warm up tortillas- You do not want to skip this step! Warm up tortillas taste so much better. Especially with these fajitas!
- The best way to warm up tortillas is directly on the stovetop– It’s quick and warms your tortillas right up giving them those charred streaks. Turn stove flame on medium heat and place tortilla directly on the flame. Warm for 30-40 seconds. Flip over and repeat.

Ingredients
Fajitas:
- 1 lb shrimp (peeled and devained)
- 3 bell peppers
- 1 medium yellow onion
- 1/4 cup chopped cilantro
- 1 tbsp lime juice (about 1/2 lime)
- 2 tbsp avocado or extra virgin olive oil (divided for cooking)
Marinade:
- 1/4 cup avocado oil (extra virgin olive oil works too)
- 2-3 tbsp lime juice (about 1 lime)
- 3 garlic cloves
- 1 tsp pink salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp cumin
For Serving:
- 4 tortillas of choice (gluten-free, whole wheat, etc.)
- lemon wedges
- avocado slices
- chopped cilantro
