Guacamole meets Mexican street corn in this chunky and creamy Loaded Guacamole. Made with grilled corn on the cob, cojita cheese, ripe avocados, Roma tomatoes, red onions, jalapeños, fresh cilantro, freshly squeezed lime juice, and spices. You’ve never had guac like this!

Loaded Guacamole

We all love a good classic homemade guac like our Best and Easiest Homemade Guacamole. However, this Loaded Guacamole is epic and on a whole other level! It’s guac meets Mexican street corn! It’s chunky, creamy and so flavorful! Made with grilled corn on the cob, cojita cheese, ripe avocados, Roma tomatoes, red onions, jalapeños, fresh cilantro, freshly squeezed lime juice, and spices. Once you’ve had guac like this you will never go back!

How to pick ripe avocados:

When shopping for your avocados, feel how hard they are. If they are really hard then they’re not ripe enough. If they’re too soft, then they’re already starting to rot on the inside. Chances are that avocado will be black and not taste good. To make the perfect guacamole you need an avocado that’s perfectly ripe. When you touch it, it still feels firm but a bit soft.

If you are shopping a day or two before you will be making your guac then buy avocados that are really hard. they will be ready to be used in guac by the time you’re ready to make it. They’ll still be firm but soft to the touch. That’s how you want your avocados to feel before cutting into them.

Another great way you can tell if an avocado is ready to be used; is simply by removing the stem right at the bottom. This will show you the color of the inside of the avocado. If it looks kind of yellowish then it’s not ready. Brownish means it has started to go bad. You want a bright green shade!

What to put in guacamole to keep it from turning brown?

Fresh lime juice is great for preventing avocados and guac from browning. The acids from the lime juice will help keep your guac fresh and slow down the browning. If you are making this guac to serve later, add a bit of extra lime juice to prevent browning. Also, leave the pits from the avocado in it. Keep in the fridge until you’re ready to serve it. Remove the pits and stir it a bit. You will notice your guacamole will be fresh and vibrant green. No brown spots at all!

What you need to make Loaded Guacamole:

Ingredients:

  • Grilled Corn on the Cob
  • Roma Tomato
  • Red Onion
  • Jalapeño Peppers
  • Cojita Cheese
  • Hass Avocados
  • Lime Juice
  • Pink Sea Salt
  • Black Pepper
  • Chili Powder

Equipment:

  • Medium Mixing Bowl

How to make Loaded Guacamole:

  1. Using a kitchen knife, carefully chop corn kernels off of cob. Hold one end of the cob and place the other in a medium bowl. The cob should be in a “standing” position. Place the knife on the top of the cob near your hand and carefully but firmly cut down removing the kernels. Repeat with all sides. Set aside. 
  2. Thinly dice Roma tomato and red onion. Seed jalapeño peppers and thinly dice. Chop cilantro and crumble cojita cheese. Add all prepped ingredients to bowl with corn kernels. Drizzle lime juice and sprinkle salt, pepper and chili powder over ingredients. Give the bowl a toss mixing ingredients together. 
  3. Cut avocado open and remove pit. Use a spoon to scoop out avocado and add to bowl with the other ingredients. Use a spoon to fold avocado into the mixed ingredients. You want avocado to be well incorporated into the rest of ingredients but you sill want it to be chunky enough. Don’t over fold or mush avocado. 
  4. Serve immediately with chips, veggies, sweet potato fries or any other preferred way.

Tips and Substitutions:

  1. Leave avocado pit inside guacamole when serving- This will prevent avocado from browning so fast.
  2. Substitute for cojita cheese- Use feta cheese.
  3. Keep jalapeño seeds- If you don’t mind guacamole having a little kick!
  4. Don’t over fold or mush avocado- You want avocado to be chunky for this guac.
