Halloween is one of my favorite holidays and I love making fun themed foods. Especially for my toddler daughter. I find that Halloween is the holiday with the most inspiration for fun foods to be made. The possibilities are endless. Even for healthy options.

As I set out to find some inspiration for new Halloween food to make this year, I found mummy pizzas. There are tons of recipes for them on Pinterest and Google. So I thought why not make them with eggplant instead of dough for a much healthier and nutrient-dense option.

These are super fun to make and a great activity to do as a family. They are great to pack for school lunches or even as an after school snack. You can also make these and serve them at a Halloween party. So many great occasions to make these for. They’re so easy to make too and only call for a handful of ingredients. There’s not a reason to not make these!

Ingredients needed to make Mini Mummy Pizzas:

  • Eggplant– This will be the crust.
  • Pizza Sauce– You can also use tomato sauce.
  • String Cheese– You want to use mozzarella string cheese as the strings will be layered to make the pizza look like a mummy.
  • Olives– To be used as the mummy eyes.

Equipment needed to make Mini Mummy Pizzas:

  • Baking Sheet Pan– For making the mini mummy pizzas.
  • Parchment Paper– For lining baking sheet pan.

How to make Mini Mummy Pizzas:

  • Step 1– Take pizzas out of the oven and serve immediately. Enjoy!
  • Step 2– Slice your eggplant into circles that are about 1/8-1/4 inches thick. Take 8 of the middle slices which would be the largest. Place on a baking sheet pan or dish and sprinkle salt over them. Cover with paper towel and let them sit for at least 15 minutes. Dab dry with paper towels. Flip over and repeat the same process.
  • Step 3– Line another baking sheet pan with parchment paper and place eggplant slices on it. Evenly spread tomato sauce over slices of eggplant. Place two slices of olives on each eggplant as eyes. 
  • Step 4– Peel the strings of the cheese. Place strings all across the pizzas. Make them look like they are wrapped. Just like a mummy. But don’t worry too much about them looking neat. Once the cheese melts they will look more like wrapped mummies.
  • Step 5– Place mini mummy pizzas in the oven and bake for 15 minutes. 

Tips and Substitutions:

  1. Remove excess water from eggplant slices– Eggplants contain a great amount of water. This can cause eggplant to get soggy when baked. Check steps below on how to remove that excess water.
  2. Slice eggplant into 1/8-1/4 inch thick circles– This will allow the eggplant to cook through in the oven. Making the slices too thick won’t allow them to cook enough and too thin they can be overcooked.
  3. Use tomato sauce instead– Substitute pizza sauce for this homemade tomato sauce loaded with veggies.
  4. Substitute for eggplant– You can also use zucchini or portobello mushrooms to make these and keep them low-carb.
  5. Switch up your crust– Instead of a veggie crust, use mini naan for a variation.

How do you remove excess water from Eggplant slices?

Eggplants contain a great amount of water. This can cause eggplant to get soggy when baked. To prevent this from happening, I like to take a few extra steps before preparing the eggplant and baking it. These steps will remove some of the excess water the eggplant naturally has. These extra steps will add some more time to your overall preparation time, however it will be well worth it. The end result won’t be soggy eggplant slices but rather mini pizzas you will be able to firmly hold with your hands.

  1. Thinly slice Eggplant into 1/8-1/4 inch thick circles. Grab the 8 in the middle. Place on a baking sheet or dish.
  2. Sprinkle with some salt and cover with paper towel. Allow it to sit for at least 15 minutes. The longer you let it sit, the more water will be removed.
  3. Take paper towel off and dab dry with a dried paper towel.
  4. Turn slices over and repeat steps again.

What type of cheese is best for these mini mummy pizzas?

You want to use mozzarella string cheese to make these mini mummy pizzas. The strings will be layered to make the pizza look like a mummy. Mozzarella cheese melts perfectly when baked and gives a nice cheesy pull.

Can Mini Mummy Pizzas be made ahead?

Yes. If you are making these for a halloween party, prep your pizzas ahead of time. Place them on your baking sheet pan and cover with Saran Wrap. Place them in the fridge for up to 24 hours. Bake once you are ready to serve.

Storing Mini Mummy Pizzas:

Store any leftover pizzas in a large Tupperware dish. If you have to layer them on top of each other, place pieces of parchment paper in between. This will prevent them from sticking together and the sauce getting over the bottom parts. Keep them refrigerated for up to 3 days. To reheat place in oven at 350 degrees F for 3-5 minutes or until they’re as warm as you’d like.
