Ingredients

  • 1 eggplant
  • 1 cup tomato sauce
  • 6 mozzarella string cheese
  • black olives sliced

Instructions

  1. Slice your eggplant into circles that are about 1/8-1/4 inches thick. Take 8 of the middle slices which would be the largest. Place on a baking sheet pan or dish and sprinkle salt over them. Cover with paper towel and let them sit for at least 15 minutes. Dab dry with paper towels. Flip over and repeat the same process.

  2. Line another baking sheet pan with parchment paper and place eggplant slices on it. Evenly spread tomato sauce over slices of eggplant. Place two slices of olives on each eggplant as eyes.

  3. Peel the strings of the cheese. Place strings all across the pizzas. Make them look like they are wrapped. Just like a mummy. But don't worry too much about them looking neat. Once the cheese melts they will look more like wrapped mummys.

  4. Place mini mummy pizzas in the oven and bake for 15 minutes.

  5. Take pizzas out of the oven and serve immediately. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Remove excess water from eggplant slices- Eggplants contain a great amount of water. This can cause eggplant to get soggy when baked. Check steps below on how to remove that excess water.
    2. Slice eggplant into 1/8-1/4 inch thick circles- This will allow the eggplant to cook through in the oven. Making the slices too thick won't allow them to cook enough and too thin they can be overcooked.
    3. Use tomato sauce instead- Substitute pizza sauce for this homemade tomato sauce loaded with veggies.
    4. Substitute for eggplant- You can also use zucchini or portobello mushrooms to make these and keep them low-carb.
    5. Switch up your crust- Instead of a veggie crust, use mini naan for a variation.
