Halloween Themed Lunchboxes

Halloween is one of my favorite holidays and now my daughter has grown to love it too. Spooky family movies, family themed costumes, carving pumpkins, and fun Halloween food activities have become a tradition for our family. So of course making a Halloween themed lunchbox is a must for us.

I created these two simple Halloween themed lunchboxes that can be easily put together. Most of the ingredients I use are from Trader Joe’s as they carry a lot of fun Halloween themed foods. These lunchboxes take very little effort to put together yet look like a ton of elaborate work went into them.

What’s in each lunchbox?

Lunchbox #1

  • Pumpkin Pasta with Sauce, Baby Spinach and Shredded Mozzarella

Halloween Themed Lunchbox #1

Ingredients:

  • Trader Joe’s Pumpkin Pasta
  • Pasta Sauce
  • Baby Spinach
  • Shredded Mozzarella
  • Sweet Peppers
  • Hummus
  • Apples
  • Almond Butter
  • Pumpkin Seeds
  • Strawberry
  • Trader Joe’s Ghosts & Bats Crispy Potato Snacks

Equipment:

  • Pairing Knife

Halloween Themed Lunchbox #2

Ingredients:

  • Bread Slices
  • Sharp Cheddar Cheese Slices
  • Butter
  • Sweet Peppers
  • Hummus
  • Mandarin
  • Celery (small piece)
  • Trader Joe’s Ghosts & Bats Crispy Potato Snacks

Equipment:

  • Pairing Knife
  • Bat Shaped Cookie Cutter

How to make Halloween Food:

Pumpkin Pasta with Sauce, Baby Spinach and Shredded Mozzarella:

I used Trader Joe’s pumpkin pasta. It’s shaped like little pumpkins and tastes like pumpkins too. Very cute and very festive! I cooked the pasta per package directions. Drained it and added a drizzle of olive oil, pasta sauce to taste and handful of shredded mozzarella. Thinly sliced some baby spinach and sprinkled it over the pasta once I served it in the lunchbox.

*Note- this pasta is not gluten-free.

Jack-O-Lantern Sweet Peppers:

These are super easy to make. Just grab a pairing knife and carefully cut out small triangles for the eyes and make a mouth with a tooth. You will have a cute Jack-O-Lantern sweet pepper. Remember, they don’t have to be perfect and it’s all about making the box fun and exciting! Make as many as you’d like and serve in the lunchbox with preferred hummus flavor. We like roasted red pepper!

Apple Monster Teeth:

Take two apple slices and spread almond butter on each. Take pumpkin seeds and stick them into the apple slices. Do it on the round part of it. Do about 4-5 seeds. These are the teeth. Cut off the stem of a strawberry and thinly slice down the middle. Carefully place the slices in the lunchbox sticking the flat sides next to each other. The teeth should be pointing out. Place the strawberry slice in between to be the tongue.

*Note- If your kid’s school is nut-free, you can use sunflower seed butter or even tahini.

*Pro Tip- Rub a bit of lemon juice on the apple slices on each side to prevent them from browning.

Bat Grilled-Cheese Sandwich:

Using a bat shaped cookie cutter, cut out two slices of bread. You will end up with two bat shaped bread slices. Spread butter on each side. Take as slice of sharp cheddar cheese and cut in half. Place each half over one slice of bread then the other slice over creating a sandwich. Place sandwich on a heated pan over medium heat on the stovetop. Use a spatula to lightly press down on the sandwich. Cook the side for 1 minute or as long as you’d like depending on how toasted you’d like the bread to be. Flip over and repeat.

*Note- I used sprouted grain bread that my daughter likes. You can use any preferred bread including gluten-free. Use any kind of cheese you like to make grilled cheese too.

Pumpkin Mandarin:

This one is so easy! Just peel the mandarin and stick a small piece of celery on top.
