Contrary to popular belief, being a stay at home mom doesn’t mean that you have all the time in the world to get things done. Our families count on us to get all the “behind the scenes” stuff done. Personally, most days I feel like 24 hours is not enough time in a day. And that’s with only having a 16 month old baby. I can’t even begin to imagine how hectic life can get for a mom with toddlers, pre-teens, teens, all with activities of their own, school work, etc.
My day starts with me getting up at the crack of dawn before my family is even up so I can make it to the gym. Is the only time I have available to go. I get home right on time to get breakfast done for my baby and my husband before he has to leave for work. Then I get myself and my baby girl ready to head out and get any errands we need to get done. Some days I take Emma to do something fun like story time at the library. Then we come home to have lunch and get ready for nap time. Then it’s time for me to get things done around the house like cleaning, laundry, dinner, etc. Then Emma wakes up from her nap and she has her afternoon snack and we play. When my husband gets home I get some time to myself to catch up on emails and messages. We have dinner, then it’s bath time then bed time. I do some cleaning and it’s time for bed. Then I wake up and do it all over again.
This is what a normal day looks like for Emma and I. In addition to this, aside from his full time job my husband has a cleaning business which I help him run. And now, I have my blog. Yes, it is a lot and it can get hectic. But I do love it. I love being a mom and a wife and helping my family in whatever they need and always being there for them. Because my life is very busy, I rely on meal prep just as much as I did when I used to work a 40 hour job. Overnight oats are my go to breakfast. I absolutely love over night oats and Emma does too. She can almost eat a whole serving by herself.
If you’re not familiar with overnight oats let me give you a quick run down. Overnight oats are the easiest breakfast you will even make. They basically cook themselves. All you need to do is mix some rolled oats, milk, chia seeds, fruit, nut butter or any other toppings, sweetener of your choice in a mason jar, leave it in the fridge overnight and you have breakfast done in the morning. Prep time the night before usually takes anywhere between 3-5 minutes. Depending on how fast you are at scooping and pouring things.
When I know that my day is going to be busier than usual and I won’t have time to make breakfast I make these. They’re great when one of us has a doctor’s appointment because I can even take them with me if I have to. Overnight oats were my breakfast pretty much everyday when I worked a 9-5. I developed this new recipe a few weeks ago. I had an eye doctor’s appointment and needed to leave the house early. I wanted to try a new flavor for my overnight oats. I usually use bananas, strawberries and blueberries.
I thought apricots would be great because they are in season. This makes the perfect summer overnight oats recipe. It really makes a delicious combination and flavorful breakfast. Try these for a quick on the go breakfast for your busy mornings or if you need a healthy breakfast for work. We all know breakfast is the most important meal of the day so why not start it with something simple but well balanced and delicious!
Blueberry Apricot Overnight Oats
- 1/2 cup rolled oats
- 1 cup almond milk
- 1/4 cup blueberries
- 1 apricot pitted and chopped into small pieces
- 1 tbsp chia seeds
- 1/2 tbsp cinnamon
- 1 tsp honey
In a mason jar layer ingredients. Add oats, blueberries and apricots, chia seeds, cinnamon, honey, almond milk.
Stir all ingredients well together.
Seal mason jar and place in fridge overnight.
Ready to go in the morning!
