Grilled Salmon Skewers

Grilled Salmon Skewers are so easy to make and so flavorful. Fresh salmon marinated with olive oil, lemon juice, and fresh dill and parsley. Perfectly grilled until flaky and delicious.

Ingredients

  • 1.5-2 lbs salmon
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp pink sea salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 1 tbsp fresh dill (thinly chopped)
  • 1 tbsp fresh parsley (thinly chopped)
  • 5-6 lemons

Instructions

  1. Preheat grill on medium-high heat.

  2. Cut salmon into small bite sized cubes. Place in a large mixing bowl. Drizzle with olive oil and lemon juice. Sprinkle with pink sea salt, black pepper, and garlic powder. Add in fresh dill and parsley. Give a good toss making sure salmon bites are well coated with the rest of ingredients. Set aside.

  3. Take lemons and cut off ends. Slice lemons into thin circles. Set aside.

  4. Take 6 skewer sticks (if wooden see note) and start assembling your skewers. Take one of the slices of lemon and fold them in half. Stick skewer through it and slide all the way to the bottom of the stick. Next, stick one of the salmon bites. Repeat this until you have 4-5 salmon bites on your skewer. Ending with a salmon bite on the top. (This is how I like to assemble these for pure aesthetic purposes. You can do it any way you prefer. By adding 4-5 salmon bites per skewer you do end up with 6 salmon skewers). Place skewer on a platter or sheet pan. Continue repeating with the rest of the salmon until it has all been assembled into skewers.

  5. Place skewers on grill and grill for 3-4 minutes. Turn skewers over and grill for another 3-4 minutes on the opposite side.

  6. Remove salmon skewers from the grill and serve while still warm. Garnish with fresh dill and lemon slices if desired. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Soak wooden skewers for at least one hour- this will prevent wooden sticks from burning while grilling your kabobs.
    2. Preheat grill- Don’t skip this step! This will prevent your salmon from sticking to the grill. 
    3. Don't overcook your salmon- Salmon cooks pretty fast and overcooking it will dry it out and result is a tough texture.
    4. Substitute for olive oil- Avocado oil will work great too.
