This Fresh Peach Salsa is a great way to use up peaches which are in great abundance during the summer time. In addition to peaches, this salsa is made with juicy Roma tomato, crisp red bell pepper, spicy jalapeño peppers, crunchy onion, fresh cilantro and lime juice. This salsa is so refreshing and the perfect balance of sweet and spicy. Great to top over grilled chicken, fish, or served with some chips and a dip.
Dice peaches into small pieces (see note). Dice bell pepper, tomato, onion, and jalapeño into small pieces too. Thinly slice fresh cilantro and measure out 1/4 cup.
Toss diced peaches and veggies in a medium mixing bowl along with cilantro. Drizzle fresh lime juice over salsa. Sprinkle pink salt and black pepper. Toss salsa until all ingredients are well combined.
Transfer salsa to a wide mouth mason jar or airtight container. Thightly seal jar and place salsa in the fridge. Allow salsa to chill for at least 1-2 hours. Salsa will taste much better when chilled.
Serve peach salsa with chips, on grilled chicken, fish, or any other preferred way. Keep refrigerated for up to 4 days.
