Fresh Peach Salsa

This Fresh Peach Salsa is a great way to use up peaches which are in great abundance during the summer time. In addition to peaches, this salsa is made with juicy Roma tomato, crisp red bell pepper, spicy jalapeño peppers, crunchy onion, fresh cilantro and lime juice. This salsa is so refreshing and the perfect balance of sweet and spicy. Great to top over grilled chicken, fish, or served with some chips and a dip.

Ingredients

  • 2 large peaches
  • 1 red bell pepper
  • 1 plum Roma tomato
  • 1 small white onion
  • 2 jalapeño peppers (seeded or leave seeds if you want it very spicy)
  • 2-3 tbsp fresh lime juice (about 1 lime)
  • 1 tsp pink salt
  • 1 tsp black pepper
  • 1/4 cup fresh cilantro (thinly sliced)

Instructions

  1. Dice peaches into small pieces (see note). Dice bell pepper, tomato, onion, and jalapeño into small pieces too. Thinly slice fresh cilantro and measure out 1/4 cup.

  2. Toss diced peaches and veggies in a medium mixing bowl along with cilantro. Drizzle fresh lime juice over salsa. Sprinkle pink salt and black pepper. Toss salsa until all ingredients are well combined.

  3. Transfer salsa to a wide mouth mason jar or airtight container. Thightly seal jar and place salsa in the fridge. Allow salsa to chill for at least 1-2 hours. Salsa will taste much better when chilled.

  4. Serve peach salsa with chips, on grilled chicken, fish, or any other preferred way. Keep refrigerated for up to 4 days.

Recipe Notes

Tips and Substitutions:

  1. Best way to dice a peach is to cut around the pit- Place the peach on a cutting board and cut down one side. Repeat for all four sides. You will end up with 4 sliced sides. Dice from there. 
  2. Keep Fresh Peach Salsa in a wide mouth mason jar- Keep the salsa tightly sealed in the fridge. This will keep the salsa fresh longer.
  3. Substitute for Roma tomato- San Marzano or Plum Tomatoes are great substitutes.
  4. Substitute for jalapeño Pepper- Use serrano pepper.
  5. Not a fan of cilantro?- Substitute for flat-leaf parsley.
