Ingredients

For Frozen Yogurt Brains:

  • 1 cup plain Greek Yogurt
  • 2 tsp pitaya powder
  • 1 tsp maple syrup

For Berry-Chia Jam:

  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds

Instructions

  1. In a small mixing bowl, mix together yogurt, pitaya powder and maple syrup. Stir to combine making sure everything is pink and there no white spots.

  2. Using a spoon, start scooping yogurt into brain molds and spread. Make sure the bottom of molds is well coated and leave a layer. You should have half a cup of yogurt left over after. Place in the freezer for 15-20 minutes.

  3. While yogurt is freezing, add raspberries, black berries and maple syrup to a small saucepan. Place on stovetop and bring to a heat on medium-high. Bring berries to a simmer. Continuously stir and mash berries until they have reduced and dissolved. Becoming a thick jam substance (will take about 5-8 minutes). Sprinkle in chia seeds and stir well (see note below).

  4. Remove jam from heat and allow it to cool-off. Remove molds from freezer and start evenly scooping jam into them. About 1 tablespoon into each mold.

  5. Evenly scoop the rest of yogurt throughout each mold. Make sure the yogurt is evenly spread and plain layer is left. This will be the surface of the brains and they need to be flat so they can stand.

  6. Place molds back in the freezer for at least 1 hour or until brains have hardened.

  7. Carefully remove frozen yogurt brains from the molds. Place on a platter and serve immediately. Enjoy!

Recipe Notes

Tips and Substitutions:

  1. The jam will freeze inside the molds completely- If you want to have a better oozing effect when you serve these, double the amount you make. cut some of the brains in half and spread some more jam in between.
  2. Remove some of the brains from the freezer early and they will get mushed- You can serve them this way. Makes the decoration more fun and spooky!
  3. The pitaya powder may be clumpy- Make sure you crush it and get it completely powdery before you measure it and add to the yogurt. This will get the right shade of pink of the brains.
  4. Substitute for maple syrup- You can use honey.
  5. Switch up your berries- You can use strawberries or blueberries instead.
