Sweet Potato Fritters with Yogurt Dip

These Sweet Potato Fritters with Yogurt Dip are such a delicious and nutrient-dense food. They are kid approved and are a tasty and healthy finger food for toddlers. Only takes a few ingredients and a few steps to make these delicious fritters.

Ingredients

For Fritters:

  • 1 large sweet potato
  • 2 medium bananas
  • 1/2 cup oat flour
  • 1/2 tbsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 tbsp coconut oil

For Yogurt Dip:

  • 1/3 cup plain greek yogurt
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tsp maple syrup

Instructions

  1. Peel and grate sweet potato. Place grated sweet potato in a cheese cloth, dish towel or paper towel. Firmly squeeze to get rid of as much liquid as possible.

  2. Peel and place bananas in a large mixing bowl. Using a fork or spoon, mash bananas. Add in egg and whisk together. Toss in the rest of ingredients; grated sweet potato, oat flour, cinnamon, and vanilla extract. Whisk again until well combined.

  3. Turn griddle on medium-high heat and grease with coconut oil. Bring to a heat.

  4. Using a spoon, start scooping out mixture and form balls that are about 3-4 inches. Place on heated surface and push down carefully with a spatula to flatten it and form a fritter. Fry fritters until golden on each side (about 3-4 minutes per side).

  5. While fritters are frying, combine all of the ingredients for yogurt dip in a small mixing bowl; Greek yogurt, cinnamon, vanilla extract, and maple syrup. Whisk together until well combined and smooth and creamy texture is reached.

  6. Serve fritters while still warm along with yogurt dip. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Don’t skip squeezing out as much liquid as possible from sweet potatoes-This will reduce the amount of excess moisture and allow for the fritters to be easily shaped and to get crunchy on the outside when pan fried.
    2. Use ripe bananas with brown spots- These bananas have a higher sugar content which will add natural sweetness to your sweet potato fritters. 
    3. Use a griddle if you don’t have a cast iron skillet- A griddle works great too when pan frying.
    4. Switch up your sweet potatoes- You can also use purple sweet potatoes for a cool color. Butternut squash or pumpkin would be great substitutes. 
    5. Substitute for oat flour- You can use tapioca flour to keep these gluten-free. 
    6. Substitute for maple syrup- You can use honey.
    7. This recipe is meant to be for infants and toddlers- Spices are kept to a minimum for this reason. If you would like to make these for older kids and/or adults, feel free to add more spices to your liking.
