Ingredients

  • 2 bags TJ's Cauliflower Gnocchi
  • 1/4 cup fresh basil
  • 5 cloves of garlic
  • 1 tsp Italian seasoning
  • 1/2 tsp pink sea salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 2 cup baby spinach
  • 2 cups tomato sauce
  • 1/2 cup shredded mozzarella
  • 1 tbsp avocado oil

Instructions

  1. Preheat oven at 350 degrees F.

  2. In a large cast iron skillet, heat up avocado oil on medium-high heat. Toss in garlic and sauté until it starts to get toasty. About 1-2 minutes.

  3. Toss your TJ's Cauliflower Gnocchi carefully in to the skillet. Sauté until gnocchi starts to get golden on both sides. It'll take about 5-7 minutes.

  4. While gnocchi is sautéing, sprinkle Italian seasoning, pink sea salt, black pepper, oregano and basil. Add baby spinach and continue to cook until it is wilted. Stir in tomato sauce and turn heat off.

  5. Sprinkle shredded mozzarella over gnocchi. Place cauliflower gnocchi in oven and bake for 15 minutes.

  6. Remove from oven and serve immediately while still warm. Enjoy!

Recipe Notes

How to store your bake:

If you're making this bake ahead or if you have any leftover just place in any Tupperware dish. You can keep it refrigerated in an airtight container. Keep in your fridge for up to four days. To reheat pop back in the oven in an oven safe dish for 8-10 minutes at 350 degrees F. You can reheat in the microwave but the gnocci will probably get a bit mushy.
