Ingredients

  • 5-7 medium sized Yukon gold potatoes
  • 1/3 cup grass-fed butter (melted)
  • 1 tbsp avocado oil
  • 1 thyme sprig
  • 1 rosemary sprig
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 4 cloves of garlic (pressed)
  • 1 tsp pink sea salt
  • 1 tsp paprika

Instructions

  1. Preheat oven at 400 degrees Fahrenheit. Line a baking sheet pan with parchment paper. Rinse and scrub potatoes well. Pat dry thoroughly and chop into fourths. Spread potatoes throughout prepped sheet pan.

  2. In a small mixing bowl, whisk together all other ingredients except avocado oil. Drizzle oil over potatoes and rub making sure potatoes are well coated. Drizzle potatoes with herbed butter mixture. Toss potatoes making sure all potatoes are well coated again.

  3. Place potatoes in the oven and roast for 30 minutes. Set oven from bake function to broil. Broil potatoes on high for 2 minutes.

  4. Remove potatoes from the oven and serve immediately while still hot. Enjoy!

Recipe Notes

Tips and Substitution:

  1. Use other potatoes if you don't have Yukon Gold- Carola, Russet and Red Bliss are great substitutes.
  2. No avocado oil?- Substitute for olive oil, coconut oil, or any oil with a high smoking point.
  3. Spread potatoes evenly throughout sheet pan- Leave some space between them to make sure they get evenly roasted.
  4. Line baking sheet pan with parchment paper- This will prevent potatoes from sticking to the pan surface.
  5. Don't skip broiling the potatoes- This gives them a nice crisp texture on the top.
