Oven Roasted Yukon Gold Potatoes (With Herbed Butter) make for a delicious side dish. Roasted to perfection, they'll come out of the oven crispy and caramelized on the outside; while soft and creamy on the inside. These vibrant yellow potatoes can be beautifully displayed making an elegant and pretty side dish.
Preheat oven at 400 degrees Fahrenheit. Line a baking sheet pan with parchment paper. Rinse and scrub potatoes well. Pat dry thoroughly and chop into fourths. Spread potatoes throughout prepped sheet pan.
In a small mixing bowl, whisk together all other ingredients except avocado oil. Drizzle oil over potatoes and rub making sure potatoes are well coated. Drizzle potatoes with herbed butter mixture. Toss potatoes making sure all potatoes are well coated again.
Place potatoes in the oven and roast for 30 minutes. Set oven from bake function to broil. Broil potatoes on high for 2 minutes.
Remove potatoes from the oven and serve immediately while still hot. Enjoy!
