Vegan Eggnog

Vegan Eggnog is so creamy, rich and delicious. Made with plant-based milk, oats, cinnamon, nutmeg, and maple syrup. All the ingredients that make eggnog so unique and tasty. While being egg-free and vegan friendly. A version of eggnog everyone can indulge in and enjoy.

Ingredients

  • 1/2 cup gluten-free rolled oats
  • 1 cup water
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1/4 tsp pink or sea salt
  • 3 cups almond milk

Instructions

  1. In a small saucepan combine oats and water. Place on stovetop and bring to a boil on high heat. 

  2. Once oats start boiling, bring heat down to medium-low and allow to simmer until water has started to be reduced. No more than 2-3 minutes. It should still look wet and not dry at all. 

  3. Add cooked oats to blender along with the rest of ingredients. Blend at high speed until creamy texture has been reached. 

  4. Pour vegan eggnog into a large wide mouth mason jar or pitcher. Allow to completely cool-off. Place in the fridge and refrigerate until it's very chilled. At least 2-4 hours or preferably overnight.

  5. Serve and garnish with cinnamon. Enjoy!
