Ingredients

  • 1 cup grated sweet potato
  • 1 pink lady apple (peeled and grated)
  • 1 cup old fashioned oats (gluten-free)
  • 1/4 cup coconut oil
  • 1 tsp maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch salt
  • 1 egg

Instructions

  1. Preheat oven at 400 degrees Fahrenheit. Line a large baking sheet pan with parchment paper. Peel and grate sweet potato and measure out 1 cup. Peel and grate apple.

  2. Add sweet potato and apple to food processor along with the rest of ingredients. Pulse together for 30-40 seconds until all ingredients are well combined. 

  3. Scoop out mixture with your hands or ice cream scooper and shape into small bites about 2-3 inches wide. Place on parchment paper and repeat until all mixture is gone and shaped into bites.

  4. Place bites in oven and bake for 22 minutes.

  5. Remove sweet potato apple bites from the oven. Use a spatula to gently transfer bites to a cooling rack. Allow bites to cool-off for 10-15 minutes. Serve with apple sauce or Greek yogurt. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Use a large baking sheet pan- You want to make sure you leave enough room between each bite. Overcrowding your bites will result in them not baking correctly and getting mushy rather than crispy.
    2. Line your baking sheet pan with parchment paper- This will prevent your bites from sticking to the sheet pan and will make clean-up easier.
    3. Switch up your sweet potato- Substitute for butternut squash or pumpkin.
    4. Use a cooling-rack- This will allow bites to cool-down evenly without moisture building-up on the bottom. Resulting in crispy bites rather than mushy ones.
    5. Substitute for maple syrup- You can use honey unless you are making these for an infant under 1.
    6. Omit salt if making for infants- Babies under 1 can't have salt.
    7. Serve with a dip- Applesauce or greek yogurt make for a great dip for these bites.
