Air Fryer Shrimp Fajitas come together in just under 20 minutes. Made with plump and juicy shrimp and tender and flavorful veggies. Combine some simple spices and herbs to make a quick homemade fajita seasoning. Top with your favorite fixings for a flavorful and satisfying meal.
Pat shrimp dry and place in a large mixing bowl. Julienne bell peppers and onion and place in another mixing bowl. In a small mixing bowl mix together all spices and herbs; chili powder, garlic powder, paprika, oregano, cumin, pink sea salt, and black pepper. Make sure seasonings are well combined.
Drizzle shrimp with half of the avocado oil and veggies with the other half. Toss both making sure they are well coated with oil. Sprinkle half of the fajita seasoning over shrimp and the other half over veggies. Again, give both a toss making sure they are well coated with fajita seasoning.
Place veggies in air fryer basket spreading evenly. Spread between 2 baskets if needed and if your air fryer has 2 baskets. If your air fryer only has one basket, cook in batches. Set air fryer at 400 degrees F. and cook fajita veggies for 8 minutes. Open air fryer basket half way through and toss veggies. Continue air frying.
Remove cooked fajitas from air fryer and place in a large bowl. Set aside. Place shrimp in air fryer basket spreading them out. Again, cook in 2 baskets or in batches if your air fryer has one basket. Set air fryer at 350 degrees F. and air fry for 2 minutes. Open air fryer and flip shrimp to the other side. Continue air frying shrimp for another 1-2 minutes. Be careful not to overcook shrimp as it will get rubbery. You know shrimp is done when it's pink and opaque.
Transfer cooked shrimp to bowl with fajita veggies. Squeeze lime over ingredients and give them a good toss mixing fajita veggies with shrimp. Making sure both are well coated with lime juice.
Serve fajitas with warmed-up tortillas or rice to make burrito bowls. Top with preferred fixins like fresh cilantro, avocado, sour cream, salsa, etc. Enjoy!
