Honey-Ginger Roasted Carrots

These Honey-Ginger Roasted Carrots are a deliciously zesty and sweet side dish. Crunchy carrots coated with a fresh dressing made with honey, ginger root, lemon juice, ground turmeric, and more. These roasted carrots are super tasty and will complete any meal perfectly. Great to serve as any holiday side dish like Thanksgiving, Easter, or Christmas.

Ingredients

  • 2 bunches of carrots (about 12 carrots with the tops)
  • 1/4 cup honey
  • 1 tbsp grated fresh ginger
  • 1 tbsp avocado oil
  • 1/4 cup lemon juice
  • 1 tsp ground turmeric
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • fresh parsley and sea salt for garnish

Instructions

  1. Preheat oven at 400 degrees Fahrenheit. Line a large baking sheet pan with parchment paper.

  2. Trim and peel carrots (leave about 1/2 inch of the stem on top). Place carrots on prepped baking sheet pan.

  3. In a small mixing bowl whisk together honey, ginger, lemon juice, avocado oil, salt, pepper and turmeric. Pour over carrots and toss making sure carrots are well coated with mixture.

  4. Place carrots in oven and roast for 30 minutes until carrots are tender. I like to give roasted carrots another toss with the remaining dressing that's left on the parchment paper just to get more coating on them and more flavor. Because of the sugar in the honey, some of the surroundings may come out burnt. That's ok just work around that part.

  5. Serve immediately and garnish with fresh parsley and sea salt if desired. Enjoy!

Recipe Notes

Tips and Substitutions:

  1. Use a large baking sheet pan- Use a sheet pan that is at least 13x9 inches. This will give you enough room to space your carrots out.
  2. Line baking sheet pan with parchment paper- This will prevent carrots from sticking to sheet pan and will make clean-up a lot easier.
  3. Space your carrots out- Leave some space between carrots so air can circulate allowing for carrots roast evenly.
  4. Some spots around carrots may get burnt- As the carrots roast in the oven, the sugar from the honey around the carrots may burn a bit. That's perfectly fine and carrots will not get burnt at all. Cut off any tips that may be too overdone.
  5. Once carrots come out of the oven, give them another toss- Toss carrots around the sheet pan with the remaining dressing that's left on the parchment paper. This will get more dressing coated on carrots giving them more flavor.
  6. Substitute for honey- Use maple syrup and this will also make this dish vegan friendly.
  7. Substitute for coconut oil- Use any other cooking oil with a high smoking point like avocado oil.
