Ingredients

  • 1 banana
  • 1/2 cup oats
  • 1/3 cup chopped pineapple (chop into very small pieces)
  • 1 tbsp chia seeds
  • 2 tbsp coconut cream
  • 1/2 tsp vanilla extract
  • 1 cup coconut milk
  • banana, pineapple and coconut chips to top or any other preffered toppings

Instructions

  1. Place banana in a 16 oz wide mouth mason jar. Use a fork to mash banana inside the jar. Add in the rest of the ingredients; oats, pineapple, coconut cream, vanilla extract, chia seeds, and pour in coconut milk.

  2. Seal mason jar tightly and give it a good shake making sure all ingredients are well combined. Place in the fridge overnight.

  3. The next morning, remove oats from the fridge and remove lid. Stir with a spoon and top with preferred toppings. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Use fresh pineapple for better results- The fresher the pineapple the better these overnight oats will taste.
    2. Add more toppings– Once you are ready to serve your overnight oats add more toppings like more pineapple chunks, banana slices, coconut chips or flakes, etc.
    3. Add more sweetness- The pineapple and banana add natural sweetness to these oats. If you like your overnight oats sweeter, add some maple syrup or honey.
    4. Use any milk you wish- You can use any plant-based or dairy milk you desire. However, coconut milk gives these oats that authentic Piña Colada flavor.
