Air Fryer Sweet Potato Home Fries

Air Fryer Sweet Potato Home Fries are so crunchy and flavorful. Diced sweet potatoes tossed with spices and herbs, red bell peppers, and yellow onions. Then air fried until perfectly crispy. They make for such a versatile and delicious side dish. Serve with just about everything, so quick and easy to make. Perfect for meal prep too.

Ingredients

  • 3 lbs sweet potatoes
  • 1 tbsp avocado oil
  • 1 yellow onion
  • 2 cloves of garlic
  • 2 red bell peppers
  • 2 tsp paprika
  • 2 tsp dried parsley
  • 1.5 tsp pink sea salt
  • 1/2 tsp black pepper

Instructions

  1. Rinse sweet potatoes and pat dry. There's no need to peel them but if you prefer to you can. The skin actually does help them get crispier. Dice sweet potatoes into small cubes. Place cubed sweet potatoes in a large mixing bowl.

  2. Thinly dice onion, red bell pepper, and mince garlic. Toss in with sweet potatoes. Drizzle avocado oil then sprinkle in paprika, dried parsley, pink sea salt, and black pepper. Give everything a good toss making sure sweet potatoes are well coated with oil, spices and herbs.

  3. Place sweet potatoes in air fryer basket making sure to not overfill. Depending on how big your air fryer is, you will most likely have to work in batches. Our air fryer has 2 baskets and I usually have to divide the sweet potatoes into 3-4 batches to cook them through. You want to spread the sweet potatoes throughout the air fryer basket making sure there is some space in between them and no overcrowding.

  4. Set air fryer at 400 degrees F. and timer for 20 minutes. Once timer goes off, open airfryer baskets and give home fries a good toss. Place baskets back in air fryer and set temperature back on 400 degrees F. and air fry sweet potatoes for another 3-5 minutes. Remove sweet potato home fries from air fryer and repeat process with the next batch until all sweet potatoes are cooked through. If you want them a bit crunchier, add another 2-3 minutes. Just keep an eye on them to make sure they don't get burnt.

  5. Serve sweet potato home fries immediately while still warm. Garnish with fresh parsley if desdired. Serve with some ketchup or hot sauce. Enjoy!

Recipe Notes

Tips and Substitutions:

    1. Dice sweet potatoes into small cubes- If you dice your sweet potatoes into big cubes they won't get as crispy and will need more time to cook through. Which can end up in overcooked sweet potatoes.
    2. Submerge diced sweet potatoes in water and let them soak for 20-30 minutes- If you have time take this extra step. Rinse and pat dry the sweet potatoes after. This will remove most of the starch sweet potatoes contain. Which will result in crispier and crunchier home fries.
    3. Make sure to not overfill air fryer basket- You want to spread the sweet potatoes throughout the air fryer basket making sure there is some space in between them and no overcrowding. Overfilling air fryer basket with sweet potatoes won't let the air circulate as much and will result in soft and mushy sweet potatoes rather than crispy and crunchy.
    4. Switch up your sweet potatoes- You can use regular potatoes if you'd like or even other vegetables like butternut squash or pumpkin.
    5. Substitute for avocado oil- You can use refined coconut oil or olive oil.
