Easy Apple Tuna Salad

Ingredients

  • 5 oz can albacore tuna (no salt added)
  • 1 apple
  • 1 celery rib
  • 1/2 small red onion
  • 2 tbsp crushed raw walnuts
  • 1 tbsp dried cranberries
  • 2 tbsp mayo (avocado oil based)
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp pink sea salt
  • 1/4 tsp black pepper

Instructions

  1. Open and drain a can of tuna. Add drained tuna to a large mixing bowl. Thinly slice celery and thinly dice red onion. Dice apple into 1/2-1 inch cubes. Toss prepped ingredients in the bowl with tuna. Along with walnuts and dried cranberries.

  2. In a small mixing bowl combine mayo, Dijon mustard, lemon juice, pink sea salt and black pepper. Whisk together until well combined and dressing is formed.

  3. Drizzle dressing over salad and give it a good toss. Keep tossing salad until all ingredients are mixed together and well coated with dressing.

  4. Serve over arugula, romaine or any other leafy green. It's also great over toast or as a sandwich. Enjoy!

Recipe Notes

Tips and Substitutions:

  1. Make and serve this salad the same day- This salad is best when made and served immediately.
  2. If making ahead for lunch- Dice your apple in the morning and rub a little bit of lemon juice on it. The acids in the lemon juice will slow down the oxidation from the apple preventing it from browning right away.
  3. If you only have canned tuna with added salt- You can use it. Just don't add any salt to the dressing. Toss in first and make salad. Give it a try and if you'd like at this point, add the salt in.
  4. Not a fan of tuna?- This recipe is also great with shredded chicken or even shredded turkey (hello Thanksgiving Turkey leftovers).
  5. Substitute for Mayo- If you want to make this recipe even healthier, swap the mayo with plain Greek yogurt.
  6. No Walnuts?- Pecans make a great substitute or hemp hearts too if you can't have nuts.
  7. Need a substitute for dried cranberries?- Try using dried cherries.
