These Spicy Peanut Noodles are saucy, creamy, savory with a kick. The perfect meal to prep when you are craving something satisfying, spicy, and quick to make. These flavorful noodles come together in just less than 15 minutes!

Spicy Peanut Noodles

These Spicy Peanut Noodles have become my new obsession. They are so flavorful and satisfying as they are made with a rich and creamy peanut sauce. The best part is the spiciness the sauce has giving the noodles a pleasing kick. They are so easy and quick to make as they come together in less than 15 minutes! Do I need to say more why these are on constant rotation in my house?

Ingredients needed to make Spicy Peanut Noodles:

  • Rice Noodles– Or any noodles of preference.
  • Creamy Unsalted Peanut Butter– Creamy peanut butter mixes better to make a sauce. If you prefer chunky peanut butter you can use that too. Make sure it’s unsalted PB though to not over salt your noodles.
  • Aromatics– Garlic and ginger.
  • Spices– Tamari sauce, honey, rice vinegar, red pepper flakes, chili oil.
  • Hot Water– It will help peanut butter smooth out and mix with the rest of the ingredients to make the sauce.
  • For Serving– Roasted peanuts, green onions, sesame seeds, more red pepper flakes.

Equipment needed to make Spicy Peanut Noodles:

  • Medium-large pot– You need a pot that is big but not too big to boil your noodles in.
  • Strainer– To drain noodles once they are done cooking.
  • Large mixing bowl– This is where you will make your sauce then mix the noodles in.
  • Whisk– For whisking ingredients to mix sauce together.
  • Tongs– To toss noodles with sauce.

How to make Spicy Peanut Noodles:

  • Step 1– Fill up a medium-large pot with water and place on stovetop. Generously salt water and bring to a boil on high heat. Once water starts boiling add in your noodles and cook per package instructions. Once noodles are cooked, drain and drizzle with a bit of olive oil if desired. 
  • Step 2– While water comes to a boil and noodles cook, prep your sauce. Mince garlic and grate enough ginger to measure 1 tablespoon. Add all the ingredients for the sauce to a large mixing bowl; peanut butter, garlic, ginger, tamari, honey, rice vinegar, red pepper flakes, and chili oil. Whisk together and slowly start adding in hot water. Start with 1/4 cup and continue whisking. See how thick or thin your sauce is at this point. If you would like it thinner, add more hot water until desired creaminess if reached. 
  • Step 3– Once noodles are ready, toss in bowl with sauce. Using tongs, continue tossing noodles until they are completely coated with peanut sauce.

  • Step 4– Serve immediately and garnish with roasted peanuts, green onions, sesame seeds, crushed red pepper flakes. Enjoy!

Tips and Substitutions:

  1. Add some veggies– Make these noodles a more rounded meal by adding some veggies like thinly julienned carrots, thinly sliced mushrooms, broccoli florets, thinly sliced red bell peppers, etc.
  2. Add more protein– Shredded chicken is a great way to add more protein to these noodles. Some cooked shrimp would go great too or tofu.
  3. Substitute for peanut butter– If you can’t have peanut butter, you can use almond butter as a substitute.
  4. Substitute for tamari sauce– Use coconut aminos to keep the sauce gluten-free.

How to serve Spicy Peanut Noodles:

The beauty of these spicy peanut noodles is that they can be served either hot or cold. Making it perfect for meal prepping. You can also add some veggies to these noodles for a more well-rounded meal. Carrots, broccoli, red bell pepper, mushrooms, etc. are all great veggies that could be added to these noodles. Mix in some cooked chicken, shrimp or tofu for some added protein.

As mentioned above, since these noodles can be served either hot or cold, they are perfect for meal prep. You can make a batch and serve it in portions in Tupperware dishes. You will have quick and ready to-go lunches for the week ahead. Add some veggies, chicken, shrimp or tofu for an even more complete and satisfying meal.
