I can’t decide what it is that I like about these Piña Colada Overnight Oats the most. The creaminess from the coconut cream and the overall coconut flavor, or the sweetness and crunchiness the pineapple chunks give it. It really makes me feel like I’m enjoying a cocktail on the beach!

In all seriousness though, these overnight oats are super delicious and filling. They make for a wonderful and filling breakfast on a busy morning. Made with rolled oats, chia seeds, bananas and pineapples, coconut milk and cream. These overnight oats make one tasty, satisfying, nutrient-dense breakfast or snack.

Ingredients needed to make Piña Colada Overnight Oats:

  • Rolled Oats– Also known as old fashioned oats. 
  • Banana– To give the oats some creaminess and texture. Also adds natural sweetness to the oats. 
  • Pineapple Chunks– Fresh pineapple chunks. 
  • Coconut Milk– You can use any preferred milk. However, coconut milk gives these oats that Piña Colada flavor.
  • Coconut Cream– Also gives these oats that Piña Colada flavor and adds more creaminess. 
  • Chia Seeds– As they expand overnight, chia seeds will soak up most of the liquid and thicken the oats. Giving overnight oats more of an oatmeal consistency. 
  • Vanilla Extract– To elevate flavor.

Equipment needed to make Piña Colada Overnight Oats:

  • 16 oz wide mouth mason jar with lid (or similar size)- These are perfect to fit all of the ingredients in. The tight lid also helps the oats stay fresh overnight and for a couple of days after too. 
  • Measuring cups– To measure oats, pineapple, coconut milk and coconut cream. 
  • Measuring spoons– For measuring chia seeds and vanilla extract.

How to make Piña Colada Overnight Oats:

  • Step 1– Place banana in a 16 oz wide mouth mason jar. Use a fork to mash banana inside the jar. Add in the rest of the ingredients; oats, pineapple, coconut cream, vanilla extract, chia seeds, and pour in coconut milk. 
  • Step 2– Seal mason jar tightly and give it a good shake making sure all ingredients are well combined. Place in the fridge overnight.
  • Step 3– The next morning, remove oats from the fridge and remove lid. Stir with a spoon and top with preferred toppings. Enjoy!

Tips and Substitutions:

  1. Use fresh pineapple for better results– The fresher the pineapple the better these overnight oats will taste.
  2. Add more toppings– Once you are ready to serve your overnight oats add more toppings like more pineapple chunks, banana slices, coconut chips or flakes, etc.
  3. Add more sweetness- The pineapple and banana add natural sweetness to these oats. If you like your overnight oats sweeter, add some maple syrup or honey.
  4. Use any milk you wish- You can use any plant-based or dairy milk you desire. However, coconut milk gives these oats that authentic Piña Colada flavor.

Milk is the best liquid for overnight oats. You can use any kind of preferred milk such as plant-based milks like nut milk, oat milk, or coconut milk. You can also use dairy milk if you prefer and are not dairy-free or vegan. 

What not to add in overnight oats?

Don’t add toppings to overnight oats until the next morning. Extra toppings will soak into the oat mixture and can change the texture and overall taste of the oats. 

Why do my overnight oats taste bad?

The ingredients you put in your overnight oats will affect their taste. Using fresh ingredients is really important. Especially if you are using fresh fruit. You must use fresh fruit that is not overripe.

Why are my overnight oats not creamy?

You didn’t use enough liquid. As the chia seeds expand overnight they will soak up most of the liquid. The grains from the oats will also soak up liquid. Not adding enough liquid will make your overnight oats dry and lose their creaminess.

Can I use canned pineapple in Piña Colada overnight oats?

I wouldn’t recommend it. Canned fruit usually has added juice and added sugars. Canned pineapples will affect the overall taste of your overnight oats. They won’t taste as fresh and will be too sweet.

Keep your overnight oats in a mason jar or any container with an airtight lid. You can usually keep overnight oats refrigerated for up to 3-4 days. Because these Piña Colada Overnight Oats have fresh fruit in them, I would keep them for no more than 1-2 days in the fridge.

Ingredients
