These Honey-Ginger Roasted Carrots are a deliciously zesty and sweet side dish. They are super tasty and will complete any Holiday meal perfectly. They are loaded with nutrients, are fresh, and flavorful.
Honey-Ginger Roasted Carrots
Carrots have to be one of my favorite vegetables. I love them cooked, raw, juiced, in soups, etc. They’re also extremely healthy and have a great number of health benefits. They’re delicious and can be very easily paired with any other food. Roasted carrots are super tasty and make for a delicious side dish.
For this Honey-Ginger Roasted Carrots recipe you only need very few ingredients. You can line your carrots on a baking sheet pan. Pour the dressing over and toss. Then sprinkle some salt over and roast. That’s it! Nice and easy!
You guys need to make these Honey-Ginger Roasted Carrots asap. They’re seriously delicious and just so easy to throw together. The whole family can enjoy them and I’m sure they will love them too. Perfect side dish to be served at any holiday table. These carrots are my go-to’s for just about every holiday dinner or even brunch. I love to serve these for Thanksgiving, Christmas, and even Easter.
Ingredients needed to make Honey-Ginger Roasted Carrots:
- Carrots– Carrots from a bunch are best for roasting.
- Honey– Gives roasted carrots a nice sweetness.
- Ginger– Makes carrots zesty and flavorful.
- Coconut Oil– Use refined coconut oil to avoid coconut flavor.
- Lemon– Elevates flavor.
- Turmeric– Adds some flavor and color.
- Spices– Pink sea salt and black pepper
Equipment needed to make Honey-Ginger Roasted Carrots:
- Baking Sheet Pan– Use a large sheet pan that you can spread carrots on.
- Parchment Paper– To place over sheet pan and prevent carrots from sticking to it.
- Small Mixing Bowl– You will need a small bowl to mix the honey-ginger dressing in.
- Whisk– To mix together ingredients for dressing.
How to make Honey-Ginger Roasted Carrots:
- Step 1– Preheat oven at 400 degrees Fahrenheit. Line a large baking sheet pan with parchment paper.
- Step 2– Trim and peel carrots (leave about 1/2 inch of the stem on top). Place carrots on prepped baking sheet pan.
- Step 3– In a small mixing bowl whisk together honey, ginger, lemon juice, avocado oil, salt, pepper and turmeric. Pour over carrots and toss making sure carrots are well coated with mixture.
- Step 4– Place carrots in oven and roast for 30 minutes until carrots are tender. I like to give roasted carrots another toss with the remaining dressing that’s left on the parchment paper just to get more coating on them and more flavor. Because of the sugar in the honey, some of the surroundings may come out burnt. That’s ok just work around that part.
- Step 5– Serve immediately and garnish with fresh parsley and sea salt if desired. Enjoy!
Tips and Substitutions:
- Use a large baking sheet pan– Use a sheet pan that is at least 13×9 inches. This will give you enough room to space your carrots out.
- Line baking sheet pan with parchment paper– This will prevent carrots from sticking to sheet pan and will make clean-up a lot easier.
- Space your carrots out– Leave some space between carrots so air can circulate allowing for carrots to roast evenly.
- Some spots around carrots may get burnt– As the carrots roast in the oven, the sugar from the honey around the carrots may burn a bit. That’s perfectly fine and carrots will not get burnt at all. Cut off any tips that may be too overdone.
- Once carrots come out of the oven, give them another toss– Toss carrots around the sheet pan with the remaining dressing that’s left on the parchment paper. This will get more dressing coated on carrots giving them more flavor.
- Substitute for honey– Use maple syrup and this will also make this dish vegan friendly.
- Substitute for coconut oil– Use any other cooking oil with a high smoking point like avocado oil.

What kind of carrots to use for roasting:
Using carrots from a bunch are best for roasting. I find they are a bit sweeter than larger carrots. Also, since they are smaller they are roasted a lot faster. If you want to use larger carrots that’s perfectly fine. Just cut them into sticks for quick roasting and making sure they’re cooked through.
Buying carrots with the tops still on also makes this a much prettier dish. Makes the whole table setting look more elegant and welcoming. If you’re making them for toddlers however, I would cut them into sticks anyway. Just so that it is easier for them to handle and eat.
Can I make these Honey-Ginger Roasted Carrots Vegan?
Because this recipe calls for honey it is not vegan. However, if you swap the honey for maple syrup, it can be easily transformed into a vegan friendly dish.
Do I have to peel carrots?
Yes. Carrots grow underground so scrubbing them, rinsing them and peeling them are all a must.
How may carrots should I cook per person?
A good rule of thumb is to cook about 2-2 1/2 carrots per person. Especially for a Holiday dinner or dinner party. These Honey-Ginger Roasted Carrots are always a hit and they go fast! Most people even go for seconds. So I definitely would keep that in mind and maybe make about 2 1/2-3 carrots per person.
Meal Prepping it:
As stated above, these zesty and sweet roasted carrots can be served on the side of pretty much any other food. Serve them with chicken, fish, or a nice steak. Make them as a side dish to complete a delicious dinner or lunch. Roast them ahead of time and keep refrigerated for the week ahead. Depending on the size of your family, double the batch so you can have a side dish for a few days.

- 2 bunches of carrots (about 12 carrots with the tops)
- 1/4 cup honey
