Easy Homemade Chimichurri Sauce is easy to make and packs so much flavor. This bright green sauce is made with fresh herbs, spices, olive oil, and red wine vinegar. The taste is out of this world and will bring anything you drizzle it on to a whole other level. Great on grilled steak, chicken, fish, and veggies.

Easy Homemade Chimichurri Sauce

If you have never had Chimichurri Sauce then you have no idea what you’re missing! This is one of the most flavorful sauces you will ever have. It’s so good on all kinds of foods but especially grilled steak. It even makes a delicious marinade.

Chimichurri sauce is a bright green herby and garlicky goodness. It’s made with fresh herbs, spices, olive oil and red wine vinegar. With a loser oil base it’s smooth, savory and rich. 

Ingredients needed to make Easy Homemade Chimichurri Sauce:

  • Parsley– You want to use flat-leaf parsley that is not too bitter.
  • Cilantro– I love adding cilantro to my chimichurri. You can skip it if you don’t like it. Replace it with more parsley.
  • Aromatics– Shallot and garlic.
  • Spices and Herbs– Dried oregano, red pepper flakes, pink sea salt, and black pepper.
  • Red Wine Vinegar– You can also use white vinegar or white wine vinegar if that’s what you have.
  • Extra Virgin Olive Oil– A good high-quality EVOO is recommended for best flavor.

Equipment needed to make Easy Homemade Chimichurri Sauce:

  • Food Processor– To mix all of the ingredients together.
  • Spatula– For stirring and serving.

How to make Easy Homemade Chimichurri Sauce:

  • Step 1– Measure out 1 cup parsley and 1 cup of cilantro from the bunch. Peel shallots and garlic cloves.
  • Step 2– Add parsley, cilantro, shallots and garlic to a food processor bowl. Sprinkle oregano, red pepper flakes, pink salt, black pepper and drizzle red wine vinegar over herbs. 
  • Step 3– Close food processor and pulse ingredients until finely chopped and blended together. Careful not to over due it as everything can get pasty. You want everything to be in very small pieces. 
  • Step 4– Pour mixture to a small mixing bowl or mason jar and pour olive oil into it. Stir all ingredients with olive oil making sure oil is well incorporated into mixture. Cover chimichurri sauce and refrigerate for 1-2 hours before serving. The sauce is best when served chilled. 
  • Step 5– Serve chimichurri with your favorite grilled foods or use as marinade. Keep sauce refrigerated with a tight seal for up to a week.

Tips and Substitutions:

  1. Authentic chimichurri sauce doesn’t traditionally have cilantro- Cilantro makes for a great addition to this sauce because it adds so much flavor. If you’re not a fan of cilantro you can omit it from this recipe. Double the amount of parsley using 2 cups instead of 1.
  2. The best parsley for chimichurri is flat-leaf parsley- It has the best flavor for chimichurri sauce.
  3. Be careful not to over pulse your chimichurri in the food processor- Everything can get pasty. You want everything to be in very small pieces.
  4. Use really good quality extra virgin olive oil- It will give the chimichurri the best flavor.
  5. No shallot?- Substitute for about 1/4 of a medium red onion.
  6. Substitute for red wine vinegar- You can use white vinegar.

Storing Easy Homemade Chimichurri Sauce:

Place any leftover chimichurri sauce in an airtight container such as a wide mouth mason jar. Keep chimichurri refrigerated for up to 5-7 days.

Freezing Easy Homemade Chimichurri Sauce:

Chimichurri sauce can easily be frozen for later use. I prefer to freeze it in portions that I know I am going to use at a time. An ice tray is great to freeze chimicurri sauce or any homemade condiment for that matter. It makes the perfect serving so that you only thaw-out what you need at a time.

Add spoonfuls of the sauce into each individual ice tray mold. Cover with Saran Wrap and place in the freezer. Once the chimuchurri sauce has been frozen for 2-4 hours; remove from the ice tray. Place frozen cubes in a freezer friendly bag. Keep frozen for up to 4-6 months. Thaw-out in the fridge overnight before serving.
