How To Make Chocolate Covered Strawberries

Making Chocolate Covered Strawberries at home is pretty easy. Probably a lot easier than you think. These always make for a festive and beautiful treat to make for any occasion. We love making these for Valentine’s Day. They always make for a fun activity to do with the kids and a great way to include them in celebrating V-Day.

Chocolate Covered Strawberries are also a great treat to make for Mother’s Day or any other special occasion. They are so delicious and you can never get enough of them. Use this guide to make the best Chocolate Covered Strawberries and wow your loved ones!

What’s the best chocolate for chocolate covered strawberries:

You want to use either dark chocolate or semi-sweet chocolate for tempering. In order for tempering to properly work, the chocolate you are using must have cocoa butter in the ingredients.

What is tempering chocolate?

Tempering chocolate is the process of heating and cooling chocolate in order to stabilize it. This method then allows the chocolate to reach a smooth, shiny and glossy appearance. It also prevents the chocolate from getting sticky. You know chocolate was tempered correctly if once cooled, it has a nice snap.

Can I melt chocolate in the microwave instead?

Melting chocolate in the microwave is another option and can certainly be done. However, it can be much easier to burn the chocolate when using this method. The best way to melt chocolate in the microwave is by doing it in increments of 30 seconds. Take the chocolate out, stir it and place it back in the microwave for another 30 seconds. Continue to do this until chocolate had completely melted. Please note that when melting chocolate in the microwave, because it is done at a higher temperature, the chocolate most likely won’t have the same smooth, glossy and shiny appearance that achieved through tempering it.

What you need to make Chocolate Covered Strawberries:

Ingredients:

  • Dark Chocolate
  • White Chocolate
  • Coconut Oil
  • Strawberries

Equipment:

  • Medium Saucepans
  • Bowls
  • Toothpicks
  • Large Baking Sheet Pan
  • Parchment Paper

How to make Chocolate Covered Strawberries:

  • Step 1– Line a large baking sheet pan with parchment paper and set it aside. 
  • Step 2– Fill two medium saucepans with water about halfway. Place a heat resistant bowl into each pan and place on stovetop. Turn heat to medium-low and bring water to a light simmer. As water starts to simmer, add 1 tablespoon of coconut oil into one bowl and the teaspoon of coconut oil into the other bowl. Allow coconut oil to melt in each bowl. 
  • Step 3– Once coconut oil has melted, add dark chocolate into the bowl where the tablespoon coconut oil was melted and the white chocolate into when the teaspoon coconut oil was melted. Continue to simmer until both chocolates have completely melted stirring occassionally. Keep a close eye on both chocolates and as soon as they completely melt, remove them from stovetop. Do not overheat chocolate because it will burn. 
  • Step 4– Set each bowl with melted chocolates next to bowl filled with strawberries and prepped sheet pan. Use toothpicks and insert them on top of each strawberry through the stem. Dip each strawberry into dark chocolate slightly turning each way. Make sure they are well covered in chocolate as near to the stem as possible. Hold strawberry up over the chocolate allowing it to drip the excess chocolate as much as possible. Place chocolate covered strawberry on parchment paper. Continue with all strawberries until they are all covered in chocolate. 
  • Step 5– Take a fork and dip it in white chocolate. Drizzle Each chocolate covered strawberry with white chocolate. 
  • Step 6– Place prepped strawberries in the fridge for 30 minutes to an hour to allow the chocolate to set and harden and create a nice shell. The coconut oil in the chocolate will help make an even nicer hard chocolate shell. 
  • Step 7– If you are using other toppings such as nuts, coconut or sprinkles. Place those in a small bowl. Right after dipping the strawberries in the chocolate, dip them in the preferred topping. Place on parchment paper and transfer to fridge once thsi part is done.

How to store Chocolate Covered Strawberries:

To store any leftover chocolate covered strawberries, start by lining a large Tupperware dish with parchment paper. This will prevent the chocolate from sticking to the surface of the dish. Gently line strawberries next to each other. If you can more strawberries, place another piece of parchment paper over the strawberries that are already in the container. Gently place the next layer of strawberries. Continue until all strawberries are lined up and place cover. Make sure to not over stuff the dish with strawberries so that the top doesn’t smush them. Keep chocolate covered strawberries refrigerated for up to 3-5 days.

What do I do with leftover melted chocolate?

If you have leftover melted chocolate, allow the chocolate to completely cool off. Once the chocolate has cooled down, pour it into a zip silicone or plastic bag. Make sure to get all the air out of the bag before zippering it. Keep the chocolate refrigerated. You can then temper this chocolate again to make more chocolate covered strawberries. You can also enjoy it as is or in any other chocolate recipes. If you decide to melt the chocolate again, you don’t need to add coconut oil again since there’s oil in it already.

Tips and Substitutions:

  1. Use a double boiler if you have one- This makes it easier to melt chocolate. However, if you don’t have one you can use a pot and heat resistant bowl.
  2. Use fresh and firm strawberries- The chocolate will stick right to them. Mushy and moldy strawberries will not get coated as nicely and will ultimately go bad.
  3. Have fun and switch up the chocolate patterns- Dip a few strawberries in white chocolate and drizzle with regular chocolate. So fun!
  4. Use other toppings- Nuts, sprinkles, dried fruit or fruit powders are great toppings!
  5. Make sure strawberries are completely dried- Wet strawberries will prevent the chocolate from sticking to it and are more likely to get mushy.
  6. Keep water away from chocolate- Water will make melted chocolate get lumpy and ultimately dry it out.
