What’s in these overnight oats?

These Carrot Cake Overnight Oats ate absolutely delicious. The combination of flavors are just like in a traditional carrot cake. They’re made with fresh grated carrots, cinnamon, nutmeg, freshly cut pineapple, vanilla extract, and coconut cream. It also has the essential ingredients found in any overnight oats recipe. It’s made with rolled oats, coconut milk (any other plant based milk can be used) and chia seeds. As you can see these make a very nutritious breakfast as well.

What you need to make these Carrot Cake Overnight Oats:

Ingredients:

  • Rolled Oats
  • Carrots
  • Pineapple
  • Coconut Cream
  • Coconut Milk
  • Cinnamon
  • Nutmeg
  • Vanilla Extract
  • Maple Syrup
  • Chia Seeds

Equipment:

  • Small wide mouth mason jar

How to make Carrot Cake Overnight Oats:

  1. Combine all of the ingredients in a small wide mouth mason jar. Tightly seal jar with lid and give it a good shake making sure all of the ingredients are well combined. 
  2. Place oats in the fridge and refrigerate overnight. 
  3. The next day, remove oats from the fridge and remove lid. Use a spoon to give oats a good stir. Top with your preffered toppings and enjoy!

Meal Prepping it:

These Carrot Cake Overnight Oats are great for meal prep. They are so easy to make and even easier when you do a bit of prep work ahead of time. Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup shredded carrots
  • 2 tbsp chopped pineapple (very small pieces)
  • 2 tbsp coconut cream
  • 1 cup coconut milk
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1 tsp maple syrup
  • 1 tbsp chia seeds
  • crushed waluts and coconut chips to top or any other preferred toppings

  3. OMG I love overnight oats AND carrot cake! I always found oats to be great for milk supply when breastfeeding so def pinning this to save for the future!

    1. I used pineapples because some traditional carrot cake recipes call for it and I think it adds it a little something. You can omit them completely and add some freshly squeezed orange juice for added zest. or a good substitute could be bananas or maybe mangoes too if you want it chunkier.
