These Banana Chocolate Chip Waffles are warm, fluffy and delicious. Made with gluten-free flours, ripe bananas, and dark chocolate chips. These waffles are gluten-free, dairy-free with no refined-sugars.

Banana Chocolate Chip Waffles

A few weeks ago I came across a waffle maker online and realized we didn’t have one. Decided to buy it and after receiving it was inspired to get creative and make some delicious waffles. Went in the kitchen and let my creativity run wild and just looked around to see what I could use to make some good waffles.

Found some ripe bananas and chocolate chips in my pantry and decided to give those a try. I got all my ingredients together and mixed everything. Made the waffles and they were a success! They were fluffy, sweet but not too sweet, and all the ingredients held together. They were delicious and most importantly, my family approved.

I was so happy I had a successful recipe on the first try and from just trying some stuff together off the top of my head. I went on with my day and later on came to realize I never wrote down the recipe. To make it worse, I couldn’t remember it to save my life. Went to work and tried it again and again.  It took me a good 4-6 times to try it before I finally got it again. I was so excited but put my celebration on pause and went and wrote down the recipe immediately. Lesson definitely has been learned!

Ingredients needed to make Banana Chocolate Chip Waffles:

  • Flours– Tapioca flour and almond flour.
  • Eggs– Binding agent.
  • Coconut Oil– Adds moisture.
  • Ripe Bananas– Use pretty ripe bananas to add more sweetness.
  • Dark Chocolate Chips– Or dark chocolate chunks.
  • Baking Powder– Helps waffles rise and get fluffy.
  • Vanilla Extract– Adds flavor.
  • Pink Salt– Elevates flavor and balances out the sweetness from the banana and chocolate chips.

Equipment needed to make Banana Chocolate Chip Waffles:

  • Waffle Maker– Any waffle maker will do.
  • Mixing Bowls– One for wet ingredients and another for dry ones.
  • Whisk– To whisk ingredients into a batter.
  • Cooling Rack– For waffles to rest. This allows all the moisture to be released evenly and not get trapped on the bottom of the waffles as they rest.

How to make Banana Chocolate Chip Waffles:

  • Step 1– In a large mixing bowl combine tapioca flour, almond flour, baking powder and salt. Whisk together until ingredients are well combined. 
  • Step 2– In another mixing bowl, mash banana. Crack in eggs, drizzle melted coconut oil, and vanilla. 
  • Step 3– Pour wet ingredients into dry ingredients and whisk together until batter is formed. Make sure there aren’t any flour streaks left. Fold chocolate chips into batter.
  • Step 4– Grease waffle maker a bit with some more coconut oil. Preheat waffle maker at 350 degrees F. Pour about 1/4 cup of batter at a time into heated waffle maker. Cook waffle until waffle maker’s light goes on indicating the waffle is ready. Continue process with the rest of the batter until all waffles are cooked through. 
  • Step 5– Place cooked waffles on a cooling rack and keep warm. Serve immediately and top with banana slices, maple syrup, and any other preferred toppings. Keep any leftover waffles refrigerated for up to 5-7 days.

Tips and Substitutions:

  1. Make sure no flour streaks are left when mixing batter- Unmixed flour in batter will result in not evenly cooked waffles and for certain parts to ramain uncooked. Make sure to whisk the batter well and that there aren’t any streaks of flour left in it. 
  2. Careful not to use too much coconut oil when greasing waffle maker– If too much is used, as the oil melts it will water down batter and waffles will become too mushy. Use no more than 1/2-1 tsp coconut oil.
  3. No Coconut oil?- Use butter or ghee as a substitute.
  4. Do not use metal utensils to flip waffles in waffle maker- Metal utensils such a spatula, can scratch your waffle maker and start to ware out its coating. This will then cause your waffle maker to not heat up evenly and not cook waffles evenly as well. Instead, opt for using silicone spatulas to flip your waffles. 

How to serve Banana Chocolate Chip Waffles:

I love serving these with extra banana slices and warm maple syrup. I also like adding some crushed walnuts or pecans over my waffles to add some crunchiness. A little bit of butter before adding your warm maple syrup takes these to a whole other level.

What makes these waffles allergy friendly?

These Banana Chocolate Chip Waffles are gluten-free, dairy-free and have no added sugar. The only sweetener in this recipe is the ripe banana that adds enough sweetness. The chocolate chips are semi-sweet and also add some sweetness to the waffles. A blend of tapioca and almond flour is used to make these making them gluten-free. The combination makes the waffles dense but fluffy at the same time.

Why use ripe bananas to make waffles?

Ripe bananas are actually pretty beneficial for us. The more ripe the banana is, the more antioxidants it has. They’re also a lot sweeter which makes them perfect for baking. There’s no need to add any sugar or any other sweeteners to your baked goods. A ripe banana will make them sweet enough. Including waffles!

How do you make waffles crispy and not soggy?

Make sure that you preheat your waffles maker. As soon as the batter hits the heated surface it will start to cook the waffles immediately. The starch from the tapioca flour in these banana chocolate chip waffles helps them get crispy too.

Meal Prepping it:

These waffles are great for meal prepping and building a freezer stash. Make a batch ahead on your meal prep day and keep in your fridge to have during the week. Double the batch to freeze half of the waffles. This way you will have some frozen waffles for a busy morning.

Storing and Reheating:

Allow your bananas chocolate chip waffles to completely cool-off. Once they do, place them in a an airtight container or a zipper bag. Keep them refrigerated for up to 4-5 days. Reheat in the oven or stovetop to maintain their crispiness. You can also reheat them in the microwave but this will make them slightly soft.

Freezing Banana Chocolate Chip Waffles:

These Banana Chocolate Chip Waffles are freezer friendly. Place them in a freezer or silicone bag and freeze. Place a piece of parchment paper in between each waffle to prevent them from sticking to each other. Waffles will last up to 3 months in the freezer. Thaw out in the fridge when ready to use. Reheat in the oven or stovetop.
