Air Fryer Shrimp Fajitas
We love my quick and easy to make traditional stovetop Shrimp Fajitas. However, when I am looking for a satisfying and flavorful dinner that comes together in less than 20 minutes; these Air Fryer Shrimp Fajitas are my go-to. Made with plump and juicy shrimp and tender and flavorful veggies. Combine some simple spices and herbs to make a quick homemade fajita seasoning. Top with your favorite fixings for a flavorful and satisfying meal.
Ingredients needed to make Air Fryer Shrimp Fajitas:
- Shrimp– Medium-large shrimp that has been peeled and deveined.
- Bell Peppers– Use a combination of red, yellow or orange.
- Yellow Onion– Can use red onion too.
- Spices and Herbs– To make fajita seasoning you will need chili powder, garlic powder, paprika, oregano, cumin, pink sea salt, and black pepper.
- Lime Juice– To add some zest and depth to the whole dish.
- Avocado oil– For cooking.
Equipment needed to make Air Fryer Shrimp Fajitas:
- Air Fryer- I have a 2 basket air fryer which allows me to cook fajita veggies and shrimp simultaneously. You can use a one basket air fryer too. You just will have to cook everything separately and in batches depending on how big your air fryer is.
- Large Mixing Bowls– Use large bowls that will give you enough space to toss both veggies and shrimp in.
- Small Mixing Bowl– You will need a smaller bowl to combine spices and herbs in to make your fajita seasoning.
How to make Air Fryer Shrimp Fajitas:
- Step 1– Pat shrimp dry and place in a large mixing bowl. Julienne bell peppers and onion and place in another mixing bowl. In a small mixing bowl mix together all spices and herbs; chili powder, garlic powder, paprika, oregano, cumin, pink sea salt, and black pepper. Make sure seasonings are well combined.
- Step 2– Drizzle shrimp with half of the avocado oil and veggies with the other half. Toss both making sure they are well coated with oil. Sprinkle half of the fajita seasoning over shrimp and the other half over veggies. Again, give both a toss making sure they are well coated with fajita seasoning.
- Step 3– Place veggies in air fryer basket spreading evenly. Spread between 2 baskets if needed and if your air fryer has 2 baskets. If your air fryer only has one basket, cook in batches. Set air fryer at 400 degrees F. and cook fajita veggies for 8 minutes. Open air fryer basket half way through and toss veggies. Continue air frying.
- Step 4– Remove cooked fajitas from air fryer and place in a large bowl. Set aside. Place shrimp in air fryer basket spreading them out. Again, cook in 2 baskets or in batches if your air fryer has one basket. Set air fryer at 350 degrees F. and air fry for 2 minutes. Open air fryer and flip shrimp to the other side. Continue air frying shrimp for another 1-2 minutes. Be careful not to overcook shrimp as it will get rubbery. You know shrimp is done when it’s pink and opaque.
- Step 5– Transfer cooked shrimp to bowl with fajita veggies. Squeeze lime over ingredients and give them a good toss mixing fajita veggies with shrimp. Making sure both are well coated with lime juice.
- Step 6– Serve fajitas with warmed-up tortillas or rice to make burrito bowls. Top with preferred fixins like fresh cilantro, avocado, sour cream, salsa, etc. Enjoy!
Tips and Substitutions:
- Use larger sized shrimp– Not only will they make for plump and robust shrimp fajitas, larger shrimp will cook better in the air fryer and is less likely to overcook.
- Get shrimp that has been peeled and deveined– It will make prepping much easier.
- Prep all ingredients ahead- The ingredients cook pretty quickly so you want to make sure everything is prepped and ready to toss into the air fryer once you start cooking.
- Don’t overcrowd air fryer basket(s)– Overcrowding prevents air from properly circulating throughout the basket. Which will result in more cooking time having to be added. This then can cause ingredients to get overcooked or to not cook evenly.
- Stay close to shrimp while it’s cooking- You do not want to overcook your shrimp. Shrimp can very easily overcook which results in rubbery and chewy shrimp. Make sure you don’t cook it over 1-2 minutes per side. You will know your shrimp is cooked once it turns pink and opaque.
- Thaw shrimp before cooking if you are using frozen shrimp– Frozen shrimp will take longer to cook and will release too much moisture which can completely change the texture of the shrimp.
- Use any kind of bell peppers– We like using a variety of red, orange or yellow bell peppers. You can also use green bell pepper.
- Substitute for yellow onion– You can use red onion.
- Substitute for avocado oil– You can use any cooking oil like olive oil or refined coconut oil.

I love serving these Air Fryer Shrimp Fajitas with some warm tortillas and our favorite fixins. I also love serving these over some rice or cauliflower rice to make flavorful burrito bowls. Some of our favorite toppings to add to these Air Fryer Shrimp Fajitas are:

What type of shrimp should you use for Air Fryer Shrimp Fajitas?
The best shrimp to use is fresh larger shrimp. Larger shrimp will cook better in the air fryer and is less likely to overcook. Larger shrimp also make for plump and robust shrimp fajitas. Also, if you are using frozen shrimp, thaw out before cooking. Frozen shrimp will take longer to cook and will release too much moisture which can completely change the texture of the shrimp.
Can I cook the fajita veggies and shrimp together?
The fajita veggies take much longer to cook than shrimp do. Shrimp cook pretty fast. Cooking the two together will result in shrimp getting overcooked and getting rubbery. It’s best to cook the fajita veggies and shrimp separately and then mix together.
How do I reheat the leftover shrimp fajitas?
The best way to reheat leftover shrimp fajitas is by placing them back in the air fryer. Set at 350 degrees F and reheat for 3-5 minutes. Toss fajitas half way through reheating.
Do I serve fajitas with a tortilla?
Yes. Fajitas are great when served with tortillas. Just make sure to warm-up tortillas first. The best way to warm up tortillas is directly on the stovetop. It’s quick and warms your tortillas right up giving them those charred streaks. Turn stove flame on medium heat and place tortilla directly on the flame. Warm for 30-40 seconds. Flip over and repeat.
How to store Air Fryer Shrimp Fajitas:
Place air fryer shrimp fajitas in a container with a tight lid. Keep them refrigerated for up to 1-2 days. If you are storing your shrimp fajitas before air frying, place seasoned fajita veggies and shrimp in 2 separate zip bags. Keep them refrigerated for 2-3 days until ready to air fry.

Ingredients
- 1 lb shrimp (peeled and deveined)
- 2 bell peppers (Red, yellow or orange)
- 1 large yellow onion
- 1 tbsp avocado oil (divided)
- 2 tsp chili powder
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tsp oregano
- 1/2 tsp cumin
- 1 tsp pink sea salt
- 1 tsp black pepper
- 1 lime
Instructions
Pat shrimp dry and place in a large mixing bowl. Julienne bell peppers and onion and place in another mixing bowl. In a small mixing bowl mix together all spices and herbs; chili powder, garlic powder, paprika, oregano, cumin, pink sea salt, and black pepper. Make sure seasonings are well combined.
Drizzle shrimp with half of the avocado oil and veggies with the other half. Toss both making sure they are well coated with oil. Sprinkle half of the fajita seasoning over shrimp and the other half over veggies. Again, give both a toss making sure they are well coated with fajita seasoning.
Place veggies in air fryer basket spreading evenly. Spread between 2 baskets if needed and if your air fryer has 2 baskets. If your air fryer only has one basket, cook in batches. Remove cooked fajitas from air fryer and place in a large bowl. Set aside. Place shrimp in air fryer basket spreading them out. Again, cook in 2 baskets or in batches if your air fryer has one basket. Set air fryer at 350 degrees F. and air fry for 2 minutes. Open air fryer and flip shrimp to the other side. Continue air frying shrimp for another 1-2 minutes. Be careful not to overcook shrimp as it will get rubbery. You know shrimp is done when it's pink and opaque.
