These Fresh Fruit Popsicles make for a healthy and refreshing summer treat. Perfect for a hot summer day. These pops are made with nothing but fresh fruit and coconut water. They are super easy to make and fun as well. Great to make with the kids as a fun activity to do together as a family. Made with fresh watermelon, strawberries, kiwi, blueberries and coconut water.

Fresh Fruit Popsicles

These Fresh Fruit Popsicles are the perfect frozen treat to enjoy all summer long. They are so refreshing, tasty and super healthy. These pops are made just fresh fruit and coconut water. No added sugars, additives, fructose corn syrup, or any unhealthy ingredients. Much better than store bought popsicles as these use nothing nut fresh ingredients. They are also so fun to make and I love getting the kids to help me when I make these. It’s a great activity to do together as a family. You won’t get enough of these Fresh Fruit Popsicles and will be making them all summer long.

Ingredients needed to make Fresh Fruit Popsicles:

  • Fresh Fruit– Kiwis, Strawberries, and Blueberries.
  • Watermelon– For pureeing.
  • Coconut Water– To add to fresh fruits and make popsicles.

Equipment needed to make Fresh Fruit Popsicles:

  • Blender– To puree watermelon.
  • Popsicle Molds– I like using silicone molds because it makes it easier for popsicles to pop right out. I also use popsicle molds that hold about 3 fl oz each. Which makes 10 popsicles.
  • Popsicle Sticks– I use traditional wooden popsicle sticks.

How to make Fresh Fruit Popsicles:

  • Step 1– Place cubed watermelon in blender and blend for a 30-40 seconds until it purees. Peel kiwis and thinly slice. Thinly slice strawberries and measure out 1/2 cup. Measure put 1/2 cup blueberries. 
  • Step 2– Fill about 1/2 an inch of watermelon puree into 10 popsicle molds. Start adding fruit into each mold evenly spreading kiwi slices, strawberry slices and blueberries. Pour in coconut water filling up about 2/3 of the way up of each mold. Pour the remaining watermelon puree to the rest of the way of each mold. 
  • Step 3– Secure popsicle mold with its lid then stick in popsicle sticks into each mold. Place fruit popsicles in freezer for at least 4-6 hours or overnight. 
  • Step 4– When popsicles have hardened, remove from freezer. Run under warm water for a few seconds so that they will easily pop out of the mold. I you are using a silicone mold like I did, you don’t have to do this. They should easily pop right out. Enjoy!

Tips and Substitutions:

  1. Use silicone popsicle molds- These make it so easy to pop the popsicles out once they are frozen. You won’t have to run them under warm water to loosen the pops.
  2. Substitute for any other fruit- You can use any fresh fruit in these popsicles. Peaches, cherries, raspberries, blackberries, mandarins, etc. are all great fruits to use in these pops too.
  3. Use ripe fruit- Ripe fruit build up more sugar making it sweeter which will also make your popsicles a bit sweeter without having to add any sweeteners.
  4. Drizzle fruit with honey or maple syrup- If you want your popsicles more on the sweeter side, drizzle and toss your fruit with a bit of honey or maple syrup to add some sweetness.

Variations:

  • Make them creamy– Add some plain greek yogurt or full fat coconut cream to keep them vegan friendly.
  • Add some fresh mint– Will add freshness to your popsicles.
  • Use other fruit– Mangoes, peaches, grapes, blackberries, raspberries, etc. are all great too.

How to pick a watermelon:

  1. Find the field spot- This is where the watermelon sat on the ground while it grew. Locate this spot and it should have a creamy and yellow color to it. If it’s white or light yellow, pick a different watermelon. 
  2. Tap it and listen If it makes a deep and hollow sound it’s a good indication that the watermelon has more water and it’s riper. Dense and dull sounds means the rind is too thick and not ripe enough. 
  3. Lift and feel how heavy it is– The watermelon should weight more than it’s size. This means the fruit is ripe and has more water.

How to cut a watermelon:

The easiest way to cut a watermelon is to slice it into inch thick circles. Start slicing each circle in half. You can then slice each half into triangles. If you want to dice it, slice the circles into long sticks. Cut off the skin and dice into cubes the size you’d like them to be.

Fresh Fruit Popsicles FAQ’s:

My popsicles seem stuck. How do I get my popsicles out of the mold?

Using a silicone popsicle mold will prevent this from happening. You can run your molds under hot water for a few seconds. This will make the popsicles soften a bit and pop out of the molds easily.

How to make fruit popsicles without molds?

You can use a silicone muffin pan or large ice cube tray to make these. Pour your liquids and add fruit to each mold. Then rap your muffin pan or ice tray with Saran Wrap. Make sure to wrap it tightly. Stick your popsicle sticks through the plastic wrap into each mold. The Saran Wrap will keep the sticks in place until the popsicles harden.

How long do homemade popsicles last?

This Fresh Fruit Popsicles will last in the freezer for 3-4 months.

Storing Fresh Fruit Popsicles:

Once you have removed your frozen popsicles from the molds, I like to place them in individual popsicle bags. I then tie them with a rubber band or a small ribbon. You can also keep the popsicles in the molds if you don’t have bags. Make sure the top of the mold is covered so that the popsicles last longer and don’t get freezer burn.
