These Maple Bacon Brussels Sprouts make for the best fall side dish. Crisp Brussels sprouts are roasted until soft and tender and mixed with crunchy bacon. The perfect balance between sweet and savory. These Brussels sprouts are great for any weeknight dinner, Thanksgiving or Holiday meal.

Maple Bacon Brussels Sprouts

One of my personal favorite fall vegetables are hands down brussels sprouts. I love how versatile they are and how great they go with other vegetables and foods. Most people may not find their taste particularly appetizing, but I do. I love the way they taste!

My husband in one of these people that are not exactly too fond of Brussels Sprouts. I’ve heard of them being cooked with bacon and that is one thing my husband loves. Bacon! So I created this recipe for him. He actually enjoys this dish very much and always asks for seconds.

These Maple Bacon Brussels Sprouts make for a great side dish any day of the week. I personally love to serve them during Thanksgiving and the Holidays. This sure is one recipe everyone will love. Even those who are not the biggest fans of brussels sprouts will be asking for seconds!

Ingredient needed to make Maple Bacon Brussels Sprouts:

  • Brussels Sprouts– They will become nice and crispy on the outside while being tender on the inside.
  • Bacon– The crispiness of the bacon as it bakes perfectly compliments the crispiness of the Brussels sprouts. Adds so much flavor.
  • Maple Syrup– Coats the Brussels sprouts and bacons on a caramelized goodness. The sweetness from the maple syrup perfectly compliments the saltiness from the bacon.
  • Pink Sea Salt– Balances all the flavors.

Equipment needed to make Maple Bacon Brussels Sprouts:

  • 12 inch Cast Iron Skillet– You will cook everything on one skillet.

How to make Maple Bacon Brussels Sprouts:

  • Step 1– Preheat oven at 350 degrees F.
  • Step 2– Cut off stems from Brussels Sprouts and slice them in half lengthwise. Set them to the side. Chop bacon into small bite sizes. 
  • Step 3– Place large cast iron skillet on stovetop and heat-up on medium-high heat. Add chopped bacon bites and sauté until bacon starts to cook through. About 3-4 minutes. Don’t over cook as you don’t want it to get too crispy once you place it in the oven. 
  • Step 4– Remove cooked bacon bites from skillet. No need to clean or wipe skillet. Toss in brussels sprouts, sprinkle salt and drizzle maple syrup. Stir thoroughly making sure brussels sprouts are well coated with maple syrup. Sauté on the same medium-high heat for 5-7 minutes until they start to soften. Stirring occasionally to make sure brussels sprouts are cooking evenly. 
  • Step 5– Turn heat off and toss bacon back in skillet over Brussels sprouts. Give it a careful stir to evenly get the bacon bites combined with the brussels sprouts. 
  • Step 6– Place skillet in oven and bake for 25 minutes. 
  • Step 7– Remove Brussels sprouts from the oven and serve immediately while still warm. Enjoy!

Tips and Substitutions:

  1. No need to use oil in this recipe- Bacon has natural fats that it releases once it’s being cooked. This fat is used to cook the Brussels sprouts in. If bacon releases too much fat, you can wipe some of it off.
  2. Not a fan of bacon?- You can substitute for turkey bacon. Just add a bit of oil to skillet while it heats up. Turkey bacon doesn’t release its own fat like traditional pork bacon does.
  3. Do not overcook bacon or Brussels sprouts- They will continue to roast and get crispy in the oven.
  4. No maple syrup?- Honey is a good substitute.

Variations:

  • Add Nuts– Toasted walnuts, pecans or pine nuts would add a nice crunch and flavor to these Brussels sprouts.
  • Balsamic– Drizzle some balsamic glaze over your Brussels sprouts once they are done. This will elevate the flavors and give it a nice sweet and tangy taste.
  • Aromatics– Add some garlic and/or onions and roast along with your Brussels sprouts and bacon for more flavor.
  • Honey– Make them honey bacon Brussels sprouts by simply swapping the maple syrup for honey.
  • Dried Cranberries– Toss in some dried cranberries once Brussels sprouts are done roasting. Adds more texture and hint of sweetness.

Can I substitute regular Bacon for Turkey Bacon?

You can use either regular bacon or turkey bacon in this recipe. Both would work just fine. If you are using turkey bacon I would suggest adding a bit of avocado oil or coconut oil to cook your bacon and sauté brussels sprouts. Turkey bacon doesn’t release its own fat like pork bacon does.

Why won’t my Brussels sprouts get crispy?

Overcrowding Brussels sprouts can prevent them from getting crispy while cooking. If you don’t have a large skillet, use a large baking sheet pan. Line with parchment paper and spread your Brussels sprouts and bacon throughout the sheet pan. Make sure there is not overcrowding.

Should you cut Brussels sprouts in half before cooking?

Yes. Cut larger Brussels sprouts in half before cooking. This will allow them to cook evenly and get nice and crispy. 

Storing and Reheating:

Place any leftover maple bacon Brussels sprouts in an airtight container. Keep them refrigerated for up to 3-4 days. To reheat place back in the oven at 350 degrees for about 5 minutes. You can also reheat in the air fryer. You can use the microwave to reheat; however I do not recommend at the Brussels sprouts will get soggy.
