This Adobo Steak and Avocado Salad is rich in delicious flavors you won’t be able to get enough of. It is simple to make and doesn’t require many ingredients. Made with perfectly seasoned steak tips, avocados, corn on the cob, black beans, cherry tomatoes, and Romain lettuce. Served with a homemade creamy and zesty Cilantro-Lime Ranch Dressing. Adobo Steak and Avocado Salad with Cilantro-Lime Ranch Dressing
This summer feels like it’s flying by and it must be for all the delicious recipes I have been inspired to create. This Adobo Steak and Avocado Salad with Cilantro-Lime Ranch Dressing is certainly on of the top recipes I have created this season. We have been loving it in our house as I’ve been testing and we can’t get enough of it!
This recipe was inspired by a dish I had at a restaurant I visited in the spring with a few of my friends. It’s a relatively new place in my neighborhood and it was my first time there. Their version was pretty good but for the price it honestly wasn’t worth it. Too much lettuce and not enough of the other ingredients. It was a very simple salad so I decided to give it a try at making my own.
It was a hit the first time I made it so I decided it would be great idea to add to the blog. Especially as it makes for such a great summer salad. Not only is it flavorful and easy to make, it also makes for a light lunch or dinner that is filling and satisfying at the same time.
Ingredients needed to make Adobo Steak and Avocado Salad:
- Steak Tips– You can use any steak tips from either sirloin, flank steak, or tenderloin tips.
- For Adobo Seasoning– Turmeric, garlic powder, oregano, pink sea salt, black pepper.
- Avocado Oil– Prevents steak and avocado from sticking to the grill.
- For Salad– Avocado, romaine lettuce, cherry tomatoes, corn, and black beans.
- For Dressing– Mayonnaise, almond milk, lime juice, onion powder, dried dill, dried parsley, fresh chives, and fresh cilantro.
Equipment needed to make Adobo Steak and Avocado Salad:
- Grill– To grill steak tips, avocado and corn.
- Small Mixing Bowl– For mixing spics for adobo seasoning.
- Whisk– To whisk together the spices.
- Food Processor or Blender– To blend together ingredients for cilantro-lime ranch dressing.
How to make Adobo Steak and Avocado Salad with Cilantro-Lime Ranch:
- Step 1– Heat up grill on medium-high heat for 10 minutes before starting to grill.
- Step 2– In a small mixing bowl, whisk together pink sea salt, black pepper, garlic powder, oregano and turmeric. Drizzle steak tips with 1 tbsp avocado oil. Sprinkle and rub spice mixture on steak tips. Shuck corn and cut avocados open removing the pit. Drizzle and rub additional tablespoon of avocado oil throughout each avocado side. (Rub some butter on corn if desired).
- Step 3– Place seasoned steak, corn and avocados on the grill (avocados facing down with the skin facing up). Grill steak for 2-3 minutes on each side. Grill corn for 15 minutes rotating every 2-3 minutes and grill avocado for 1-2 minutes.
- Step 4– While food is grilling, in a food processor or blender, combine all ingredients for dressing and blend well until creamy consistency is reached. Place in a small mason jar or container and keep refrigerated until ready to serve.
- Step 5– Remove food from the grill. Slice steak tips into bite size pieces. Using a knife, carefully remove kernels from corn cob. Using a spoon, carefully scoop avocados from the skin.
- Step 6– In 4 large salad bowls, evenly split romaine lettuce throughout each bowl. Do the same with steak tips, corn, black beans, and tomatoes. Layering each ingredient on top of lettuce. Place each halve of grilled avocado on each plate. Garnish with lime if desired.
- Step 7– Drizzle each salad bowl with cilantro-lime ranch dressing and serve immediately. Enjoy!
Tips and Substitutions:
- Preheat grill for 10 minutes before grilling- This will prevent food from sticking to the grill.
- Rub a bit of butter on corn- It gives corn more flavor.
- Substitute for mayonnaise- Use Plain Greek Yogurt.
- Substitute for almond milk- Use any other kind of milk.

What is adobo seasoning?
Adobo is a blend of spices that is used in many different cuisines including Mexican and Filipino. Adobo seasoning can also be found all throughout Latin American cuisines. The spices that are used to make the blend vary depending on the culture. The taste also varies from one country to another. You may find adobo in Mexican cuisine to be more spicy from that of the Filipino one that may be more on the sweet side.
What is adobo made of?
The base ingredients to make adobo particularly in Latin American dishes such as those in the Dominican Republic and Puerto Rico are- salt, pepper, garlic powder, onion powder, oregano and other preferred spices. Store bought adobo simply consists of salt, pepper, garlic powder, oregano and turmeric. Which is the blend used in this particular recipe.
Are avocado and steak good for you?
Steak is rich in protein and iron, which are both essential. In moderation, steak can be a great protein to add to your diet. Avocados are rich in healthy fats, potassium and fiber.
Meal Prepping it:
To help make this salad even easier to toss together, there are a couple of steps you can take. The first thing you can do to prep ahead is to make the dressing. This Cilantro-Lime Ranch Dressing is pretty simple to make but will save some time when prepping the salad. You can also make the adobo seasoning ahead of time and save in a small mason jar to have ready to-go when it comes time to grill your steak tips.
Storing and Reheating:
If you have any leftover Adobo Steak and Avocado Salad, separate the steak from the rest of the ingredients. Place steak, avocado, and the rest of ingredients in different airtight containers. Place the avocado facing down as this will prevent it from browning too fast. Pour the cilantro-lime rich dressing in a mason jar. Keep everything refrigerated for up to 1-2 days. Reheat steak back on the grill, on stovetop or in the microwave.

For Steak and Salad:
- 1/2 tsp pink sea salt
- 1/4 tsp black pepper
- 2 tsp dried oregano
- 2 tsp garlic powder
- 1 tsp ground turmeric
- 1 lb steak tips
- 2 avocados
- 2 corn on the cob
- 6 cups romaine lettuce chopped
- 1 cup cherry tomatoes halved
- 1 cup cooked black beans
- 2 tbsp avocado oil
For Cilantro-Lime Ranch Dressing:
- 1/3 cup mayonnaise
- 2 tbsp almond milk
- 1/2 tsp dried parsley
- 1/2 tsp dried dill
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp pink salt
- 1/8 tsp black pepper
- 1 tbsp fresh chives
- 1/4 cup cilantro
- juice from 1 lime
Instructions
Heat up grill on medium-high heat for 10 minutes before starting to grill.
