Chocolate Zucchini Bread Overnight Oats

Zucchinis are one of my top favorite vegetables. Aside from how healthy and beneficial they are, they’re also very tasty and can be eaten with pretty much anything. Chicken, fish, steak, or as zoodles. The possibilities are truly endless. Believe it or not, they’re also great to add to smoothies and oatmeal.

I love doing this since it adds a touch of vegetable to our breakfast. I think it’s great to start off the day including some vegetables to the first meal you will be eating. It sets a tone for a day of healthy eating and consuming nutritious foods.

Summer is the season for zucchini. They’re in great abundance and you can find them everywhere. Grocery stores, farmers markets, or you may even have a neighbor or friend who grows them in their backyard. I love getting a number of them and making Homemade Pasta Sauce and using the rest in different recipes. Like my Chocolate Zucchini Bread.

My new favorite way to eat my zucchinis has to be in these Chocolate Zucchini Bread Overnight Oats. They truly taste very much like chocolate zucchini bread and are 100% healthy. They make for a nutritious breakfast that will provide you and your family with the energy they need to take on the day.

It’s also great if you have picky eaters at home since you can’t see the zucchini once it gets covered with all of the rest of the ingredients. I also love that the zucchini is eaten completely raw so none of the nutrients get removed from cooking it. If you are a huge fan of zucchinis as I am then you definitely need to try this recipe ASAP.

Ingredients needed to make Chocolate Zucchini Bread Overnight Oats:

  • Shredded Zucchini– Freshly grated zucchini is best for texture and flavor.
  • Gluten-Free Rolled Oats– Also known as old fashioned oats.
  • Unsweetened Almond Milk– Or milk of choice.
  • Cacao Powder– I like using cacao powder because it is a superfood. You can also use unsweetened cocoa powder.
  • Chia Seeds– Thicken the oats as they expand overnight.
  • Hemp Hearts-Adds crunch and nutrition.
  • Cinnamon– For flavor.
  • Maple Syrup– Adds sweetness.
  • Dark Chocolate Chips– Or dark chocolate chunks.

Equipment needed to make Chocolate Zucchini Bread Overnight Oats:

  • 16 oz wide mouth mason jar with lid (or similar size)- These are perfect to fit all of the ingredients in. The tight lid also helps the oats stay fresh overnight and for a couple of days after too. 
  • Measuring cups and spoons– For measuring all of the ingredients.

How to make Chocolate Zucchini Bread Overnight Oats:

  • Step 1– In a mason jar or air tight container combine all ingredients together. Tightly seal the lid and give oats a good shake. Making sure all of the ingredients are well combined together. 
  • Step 2– Place oats in the fridge and refrigerate overnight. 
  • Step 3– The next morning, remove oats from the fridge and remove lid. Use a spoon to give oats a good stir. Top with your preferred toppings such as banana and raw walnuts. 

Tips and Substitutions:

  1. Use fresh shredded zucchini– For best flavor.
  2. Add more toppings– Once you are ready to serve your overnight oats add more toppings like more walnuts, more chocolate chips, or banana slices.
  3. Substitute for cacao powder– You can use unsweetened cocoa powder.
  4. Substitute for maple syrup– You can use honey.
  5. Add a mashed ripe banana– For more sweetness and texture.
  6. Use any milk you wish- You can use any plant-based or dairy milk you desire.

How to serve Chocolate Zucchini Bread Overnight Oats:

You can eat your Chocolate Zucchini Bread Overnight Oats right out of the mason jar you made them in. Once you remove your overnight oats from the fridge, give them a good stir. All of the ingredients set overnight so you want to stir them up. Top with your favorite toppings like more chocolate chips, fruit and nuts.

If you’re reading this and have no idea what overnight oats are then I’ll briefly explain. Overnight Oats are oatmeal that is made the night before by mixing a few different ingredients and leaving them to refrigerate overnight. The next day, you just have to take it out, stir it, add any additional toppings you may like and eat it. That’s it.

What is the best liquid for overnight oats?

Milk is the best liquid for overnight oats. You can use any kind of preferred milk such as plant-based milks like nut milk, oat milk, or coconut milk. You can also use dairy milk if you prefer and are not dairy-free or vegan. 

What not to add in overnight oats?

Don’t add toppings to overnight oats until the next morning. Extra toppings will soak into the oat mixture and can change the texture and overall taste of the oats. 

Can I use frozen zucchini?

You can use frozen zucchini. However, I would let it thaw out first. Adding frozen zucchini to your overnight oats will cause them to water down and change its texture and flavor.

Meal prepping it:

Overnight oats always make for great recipes to add to your meal plan for the week. They are pretty easy to make and you can make them even easier when you meal prep them. For this particular Chocolate Zucchini Bread Overnight Oats the first thing you can do is shred your zucchini ahead of time. Keep it in a mason jar refrigerated. You can also mix your dry ingredients in mason jars to have ready for the week ahead. Then just add wet ingredients and zucchini.

  1. Ooh, I bet they are FABULOUS with bananas and nuts added! 🙂 I have been playing around with similar combinations in my ongoing experimentation with baked oatmeal recipes for a future post – had not considered adding zucchini to the mix. Can’t wait to try this sometime! 🙂
