When it comes to Overnight Oats recipes you guys seem to really enjoy them. I’m a huge fan as they are quick to make, nutrient-dense, and delicious. They make for a great balanced, healthy, on-the-go breakfast. Overnight Oats are the perfect breakfast or snack everyone in the family can enjoy.
Aside from how good these ovenight oats are, they’re also a very healthy way to start your day. These overnight oats call for uncooked shredded carrots. Adding veggies to your breakfast tends to set the rest of your day up for healthy eating. Carrots are loaded with nutrients and are rich in vitamins and minerals.

Ingredients needed to make Carrot Cake Overnight Oats:
- Rolled Oats– Also known as old fashioned oats. Make sure they are gluten-free certified.
- Carrots– Use fresh shredded carrots.
- Pineapple– Optional but it gives the overnight oats a nice sweetness and elevates the flavors.
- Coconut Cream– Adds a nice richness and creaminess to these carrot cake overnight oats.
- Coconut Milk– Any coconut milk works. But the more fat the better as it will make the overnight oats rich and creamy.
- Spices– Cinnamon and nutmeg.
- Vanilla Extract– Adds flavor.
- Maple Syrup– For sweetness.
- Chia Seeds– As they expand they will make the oats thicken.
Equipment needed to make Carrot Cake Overnight Oats:
- 16 oz wide mouth mason jar with lid (or similar size)- These are perfect to fit all of the ingredients in. The tight lid also helps the oats stay fresh overnight and for a couple of days after too.
- Measuring cups– To measure ingredients.
- Measuring spoons– For measuring spices, nuts and seeds.
How to make Carrot Cake Overnight Oats:
- Step 1– Combine all of the ingredients in a small wide mouth mason jar. Tightly seal jar with lid and give it a good shake making sure all of the ingredients are well combined.
- Step 2– Place oats in the fridge and refrigerate overnight.
- Step 3– The next day, remove oats from the fridge and remove lid. Use a spoon to give oats a good stir. Top with your preferred toppings and enjoy!
Tips and Substitutions:
- Add more toppings– Once you are ready to serve your oats add more toppings like more cinnamon, hemp hearts, banana slices, etc.
- Substitute for maple syrup- Use honey if you don’t need these to be vegan or plant-based.
- Use any milk you wish- You can use any plant-based or dairy milk you desire.
- Substitute for walnuts– You can use pecans instead or seeds such as pumpkin seeds.
Toppings and Add-Ins:
- Nuts– Walnuts or pecans are so good in these overnight oats.
- Coconut Flakes– Add a nice flavor and a nice crunch too.
- Banana Slices– These are so good with these overnight oats and a great way to add more fruit.
- Pineapple Chunks– Extra pineapple chunks to make these overnight oats even sweeter.
- Coconut Cream– A dollop of coconut cream makes a nice garnish and adds even more creaminess.
- Hemp Hearts– They add more nutrients and a nice crunch.
- Cinnamon– A nice extra sprinkle of cinnamon adds more flavor and makes for a nice garnish.
- Collagen Peptides or Protein Powder– Add these to make these protein carrot cake overnight oats.
- Plain Greek Yogurt– Makes the overnight oats creamier and adds more protein.

Are overnight oats actually healthy?
Yes. Overnight oats are very healthy. They are an excellent source of protein, fiber, and other vitamins and minerals. Especially since you can mix them with so many other healthy ingredients such as fresh fruit, nut butters, nuts, veggies, etc. Overnight oats make for a nutrient-dense breakfast and a great source of energy.
Are these carrot cake overnight oats gluten-free?
Yes. Just make sure that the old fashioned oats you are getting are gluten-free certified. Oats are naturally gluten-free. However, some manufacturers where some oats are processed may also package other grains that are not gluten-free. Cross contamination can occur in this case. That’s why it is important that you get oats that are certified to be gluten-free.
How can I add more protein to carrot cake overnight oats?
To add more protein to these carrot cake overnight oats, add 1 scoop of protein powder or collagen peptides. You can also add a tablespoon of plain Greek yogurt to add even more protein.
How long do overnight oats need to soak before you can eat them?
Overnight oats need to soak for at least 2 hours but preferably overnight. This will allow for the chia seeds to expand and thicken your oats. It also allows for the ingredients for sit together for better flavor.


Meal Prepping it:
These Carrot Cake Overnight Oats are great for meal prep. They are so easy to make and even easier when you do a bit of prep work ahead of time. Shred your carrots and chop pinapple and keep refrigerated. Once you are ready to make your overnight oats, these will be ready. All you will have to do is combine with the rest of your ingredients.
Storing Carrot Cake Overnight Oats:
The best way to store your overnight oats is in a mason jar. You can make them right in the jar too. Then seal and shake to mix all of the ingredients together. A mason jar will also keep your overnight oats fresh as they “cook” overnight. You can keep these overnight oats refrigerated for up to 3 days. Don’t add any toppings or add-in until you are ready to serve and have these overnight oats.

- 2 tbsp chopped pineapple (very small pieces)
- 2 tbsp coconut cream
- 1 cup coconut milk
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp vanilla extract
- 1 tsp maple syrup
- 1 tbsp chia seeds
- crushed waluts and coconut chips to top or any other preferred toppings
Instructions

Overnight oats are my favorite! Do you have a recommended substitute for pineapples?
I used pineapples because some traditional carrot cake recipes call for it and I think it adds it a little something. You can omit them completely and add some freshly squeezed orange juice for added zest. or a good substitute could be bananas or maybe mangoes too if you want it chunkier.
Looks very yummy and healthy too with oats added to this. I like oats in every and any form so for sure would love to try this recipe.
