Gold Yukon potatoes roasted to perfection. They’ll come out of the oven crispy and caramelized on the outside; while soft and creamy on the inside. These vibrant yellow potatoes can be beautifully displayed making an elegant and pretty side dish.
These potatoes are super versatile and can be served on the side of any main dish such as chicken, beef, fish or pork. Throw in some veggies with this starchy side you’ll have a complete meal. Ingredients needed to make Oven Roasted Yukon Gold Potatoes:
- Yukon Gold Potatoes– They’re not too starchy which allows them to get crispy and waxy enough to withstand high heat and form more of a caramelization on the outside.
- Butter– Makes the potatoes creamy and tender.
- Spices and Herbs– The perfect blend of garlic, fresh thyme, fresh rosemary, dried oregano, dried parsley, pink sea salt and paprika.
Equipment needed to make Oven Roasted Yukon Gold Potatoes:
- Large Baking Sheet Pan– The largest sheet pan you have where you can spread out the potatoes on so they can roast perfectly.
- Parchment Paper– To line baking sheet pan with. Will prevent potatoes from sticking to the sheet pan and makes clean-up easier.
- Small Mixing Bowl– To mix the spices and herbs in.
- Whisk– To whisk together the spices and herbs.
How to roast Yukon Gold Potatoes in the oven:
- Step 1– Preheat oven at 400 degrees Fahrenheit. Line a baking sheet pan with parchment paper. Rinse and scrub potatoes well. Pat dry thoroughly and chop into fourths. Spread potatoes throughout prepped sheet pan.
- Step 2– In a small mixing bowl, whisk together all other ingredients except avocado oil. Drizzle oil over potatoes and rub making sure potatoes are well coated. Drizzle potatoes with herbed butter mixture. Toss potatoes making sure all potatoes are well coated again.
- Step 3– Place potatoes in the oven and roast for 30 minutes. Set oven from bake function to broil. Broil potatoes on high for 2 minutes.
- Step 4– Remove potatoes from the oven and serve immediately while still hot. Enjoy!
Tips and Substitution:
- Use other potatoes if you don’t have Yukon Gold- Carola, Russet and Red Bliss are great substitutes.
- No avocado oil?- Substitute for olive oil, coconut oil, or any oil with a high smoking point.
- Spread potatoes evenly throughout sheet pan- Leave some space between them to make sure they get evenly roasted.
- Line baking sheet pan with parchment paper- This will prevent potatoes from sticking to the pan surface.
- Don’t skip broiling the potatoes- This gives them a nice crisp texture on the top.

Why won’t my roasted potatoes stay crispy?
When laying your potatoes on your sheet pan, make sure to spread them out and leave enough space in between each potato. Overcrowding your potatoes will result in them steaming more than roasting which then causes your potatoes to not get crispy.
Another way you can make sure your potatoes will get crispy, is by soaking them in water for a while. At least 15-20 minutes. Then you want to drain and rinse them. Finally pat your potatoes dry making sure they are very dry. This process takes more time, however it removes most of the starch from the potatoes. This then results in your potatoes getting nice and crispy when roasted.
What kind of potatoes are best for roasting:
Any kind of potatoes can be roasted. However, the best kind of potato to roast will have to be Yukon Gold potato. This potato falls right in the middle of the starchy and waxy spectrum. Yukon Gold is an extremely versatile potato as it can withstand both dry-heat and wet-heat cooking. It’s not too starchy which allows it to get crispy and waxy enough to withstand the heat and form more of a caramelization on the outside. These potatoes get creamy and tender on the inside when roasted making them an incredible side dish.
Do I need to soak my Yukon Gold potatoes before cooking?
No. You don’t have to soak your yukon gold potatoes before cooking. However, soaking your potatoes before roasting them removes most of the starch which results in crispier potatoes. Also, if you are prepping your potatoes ahead of time and chop them, soak them in water to prevent them from browning.
Do you need to peel Yukon Gold potatoes before roasting?
No. You don’t need to peel your yukon gold potatoes before roasting. I actually like leaving the skin on to roast. The skin gets nice and crispy giving them potatoes a nice texture.
Can I use other potatoes other than Yukon Gold for this recipe?
Yes. You can use any other waxy and not too starchy potatoes as a substitute for yukon gold potatoes in this recipe. Carola, Russet and Red Bliss are great substitutes.
How do you keep potatoes from turning brown / gray when you cut them?
Soak them in water until you are ready to prep them. Soaking potatoes in water once you have peeled them and cut them prevents them from oxidizing. Which is what causes potatoes to turn brown/ gray.
Are yellow potatoes the same as yukon gold potatoes?
No. Yellow potatoes and yukon gold potatoes are two different kinds of potatoes. However, both potatoes have similar starch contents and flavors and can be used interchangeably in recipes.
Meal Prepping it:

- 5-7 medium sized Yukon gold potatoes
- 1/3 cup grass-fed butter (melted)
- 1 tbsp avocado oil
- 1 thyme sprig
- 1 rosemary sprig
- 1 tsp dried oregano
- 1 tsp dried parsley
- 4 cloves of garlic (pressed)
- 1 tsp pink sea salt
- 1 tsp paprika
Instructions
Preheat oven at 400 degrees Fahrenheit. Line a baking sheet pan with parchment paper. Rinse and scrub potatoes well. Pat dry thoroughly and chop into fourths. Spread potatoes throughout prepped sheet pan.
