Brownie Baked Oatmeal

Is there anything better than having a nutrient-dense, warm breakfast that tastes like dessert? I think not! This Brownie Baked Oatmeal is just that. A healthy and filling breakfast that tastes just like you are enjoying a traditional brownie. Made with rolled oats, peanut butter, cacao powder, chocolate chips and more. So easy and quick to make which also makes it great for meal prep. Serve as is or in a bowl with some milk.

Ingredients needed to make Brownie Baked Oatmeal:

  • Rolled Oats– Also known as old fashioned oats. Make sure they are gluten-free certified.
  • Peanut Butter– Creamy and unsalted.
  • Maple Syrup– Sweetener.
  • Cacao Powder– You can also use unsweetened cocoa powder.
  • Vanilla Extract– Elevates flavor.
  • Baking Powder– Adds moisture to the baked oatmeal.
  • Pink Sea Salt– Balances flavors.
  • Coconut Oil– I like using refined because it has less of a coconut taste.
  • Eggs– Biding agent.
  • Milk of choice– I usually use unsweetened almond milk.
  • Chocolate Morsels– Use dark chocolate to keep this dairy-free.
  • Raw Walnuts– You can skip them if you’d like but they they add a nice crunch and flavor.

Equipment needed to make Brownie Baked Oatmeal:

  • Baking Dish– Use a 8×8 baking dish.
  • Parchment Paper– For lining baking dish.
  • Large Mixing Bowl– To mix the batter in.
  • Whisk– For whisking the batter.

How to make Brownie Baked Oatmeal:

  • Step 1– Preheat oven at 350 degrees F. Line a 8×8 baking dish with parchment paper. 
  • Step 2– In a large mixing bowl whisk together eggs, milk, coconut oil, peanut butter, and maple syrup until well combined. 

Step 3– Toss in rolled oats, cacao powder, baking powder, and pink sea salt. Whisk together until well combined again. Fold in chocolate morsels and walnuts if using. 

  • Step 4– Pour oatmeal mixture into prepped baking dish. Use a spatula to evenly spread out mixture throughout baking dish. Make sure you get those corners. 
  • Step 5– Place oatmeal in oven and bake for 25 minutes. 
  • Step 6– Remove baked oatmeal from oven and let it rest for a few minutes. You can either remove oatmeal from dish by using parchment paper to pull out. Cut into even squares or you can simply scoop out from dish. Serve oatmeal in a bowl with milk if desired or as is. Enjoy!

Tips and Substitutions:

  1. Use the right size dish for this recipe- This will guarantee that the oatmeal will get baked thoroughly in the said time.
  2. Line baking pan with parchment paper- This will prevent oatmeal from sticking to the bottom. Also, leave enough paper sticking out on the sides. This will then make it a lot easier to pull oatmeal out of pan once it’s baked.
  3. No coconut oil?- Replace with olive oil or unsalted butter.
  4. No maple syrup?- Honey is a great substitute.

How to serve Brownie Baked Oatmeal:

I like removing my Brownie Baked Oatmeal from the baking dish and slicing it into 9 even squares. However, you can also simply scoop out as much baked oatmeal as you’d like and serve it in a bowl. You can eat your baked oatmeal as is or you can add some milk and eat it sort of like cereal.

Variations:

  • Use other nut butters– Almond or cashew butter would be great in this recipe too.
  • Add more protein– Add about 2 scoops of chocolate protein powder or chocolate collagen peptides for more protein.
  • Use other nuts– Pecans or almonds would be great too.
  • Turn baked oatmeal into oatmeal muffins– Line a 12-mold muffin tin pan with muffin liners. Scoop mixture into each mold and bake. Turning these into individual muffins that can be easily enjoyed on-the-go.

What’s the difference between baked oats and oatmeal?

The different between baked oats and oatmeal simply is the way the oats are prepared. As stated in its name, baked oatmeal is prepared with other ingredients and then baked. Traditional oatmeal is cooked with water and milk on stovetop or other gadgets like a pressure cooker.

Why is my baked oatmeal gummy?

If your baked oatmeal is gummy is probably because you left it sitting too long before baking. Oatmeal can be very dry. As it sits it will absorb most the wet ingredients. Prep your oatmeal mixture and bake right after to prevent your oats from getting too dry and your baked oatmeal from getting gummy.

Why is my baked oatmeal mushy?

If your baked oatmeal is too mushy is may be because either you undercooked it or you added too much milk or coco nut oil. If you added to much liquid, add a bit more of oats.

Is this Recipe Dairy-Free?

Yes. This recipe is completely dairy-free.

Can I add fruit?

Yes. Fruit is a great topping to add other this brownie baked oatmeal. Raspberries, strawberries, or banana slices are all great.

Meal Prepping it:

Baked oatmeal is perfect for meal prep. It can be prepped and baked ahead of time. Keep refrigerated for up to 5 days for a ready-to-go breakfast.

Storing Brownie Baked Oatmeal:

Place your baked oatmeal in an airtight container. This will help it remain fresh even after a few days. It can be reheated in the microwave if you’re taking this to work. However, if you can use the oven to reheat it, this is the best option. Reheat in oven for 8-10 minutes at 350 degrees F.

Freezing Brownie Baked Oatmeal:

Allow your brownie baked oatmeal to completely cool-off. Tightly wrap in Saran Wrap then in aluminum foil. I suggest freezing the brownie baked oatmeal in portions so that you only have to defrost what you need. Place the portions in a gallon freezer bag. Keep brownie baked oatmeal frozen for up to 2-3 months. Thaw-out in the fridge overnight and reheat in the microwave or in the oven.
