What are Spaghetti Squash Noodles?

When spaghetti squash is cooked, the inside flesh can be scraped. When this is done it comes out looking just like spaghetti noodles. These noodles can be served in any traditional way spaghetti is served or many other creative ways. Spaghetti squash noodles are a great low-carb option to pasta dishes.

What you need to make Spaghetti Squash Noodles:

Ingredients:

  • Spaghetti Squash
  • Avocado Oil
  • Italian Seasoning
  • Pink Sea Salt
  • Black Pepper

Equipment:

  • Sharp Cutting Knife
  • Large Baking Sheet Pan
  • Parchment Paper
  • Ice Cream Scooper or Spoon
  • Fork

How to make Spaghetti Squash Noodles:

  1. Preheat oven at 400 degrees F. Line a large baking sheet pan with parchment paper.
  2. Slice spaghetti squash in half lengthwise. Use a spoon or ice cream scooper to scoop out the extra flesh and seeds from the inside of your squash. 
  3. Drizzle and rub avocado oil throughout the inside of each half of the squash. Sprinkle Italian seasoning, salt and pepper throughout both halves of the squash. Rub the spices to get them spread all throughout each side of the squash. 
  4. Place each half of squash on prepped baking sheet pan facing down with the skin up. Place in the oven and bake for 25-35 minutes until squash is soft and tender. 
  5. Remove baked squash from the oven and let it sit for a good 10-15 minutes so it can cool-off enough to handle.
  6. Take first half of the squash and place on a flat surface. Grab squash from the top to get a grip. Using your dominant hand, use a fork and start scraping the inside of the squash. Spaghetti like strings will come out of the squash. Keep scraping until you hit the skin and noodles are completely removed. Repeat the same with the other half of the squash. Place noodles in a large mixing bowl and gently toss all the noodles together. 
  7. Serve noodles as is topped with marinara sauce, meat sauce or use in a recipe as needed.

  2. If you are using the noodles for a specific recipe- Double check what the instructions are, in this case you may not want to season your squash ahead of time. You don’t want to alter the flavors of the recipe.
  3. Baking time may vary depending on how big your squash is- 25-35 minutes will bake most squash sizes. Check how soft the squash is once you take it out of the oven. If the inside of the squash still seems a bit hard, bake it for a bit longer.
  4. Make sure you allow the squash to cool down enough to be able to handle- You don’t want to burn your hand and be sure you can get a good grip on it to be able to comfortably scoop out noodles.

Meal Prepping it:

These noodles are great for meal prepping. They can be served in many different ways. Cook your noodles ahead of time and keep refrigerated in an airtight container. Serve with marinara or tomato sauce, meatballs, meat sauce, seafood, chicken, etc. The noodles will keep in the fridge for up to 5-7 days.

Can Spaghetti Squash Noddles be frozen?

You can certainly freeze spaghetti squash noodles. Prep your squash and scoop out the noodles. Place noodles in a freezer bag. Make sure all the air is out of the bag and tightly sealing it. Freeze noodles and keep frozen for 3-6 months.
