Mexican Cauliflower Rice Burrito Bowls

Ingredients

  • Rice:
  • 1 cauliflower head
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 white onion
  • 2 garlic cloves
  • 1 tsp pink salt
  • 1 tbsp olive oil
  • Fajitas:
  • 3 multicolored peppers
  • 1/2 red onion
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1 tbsp olive oil
  • Other sides like black beans, avocado, shredded chicken, fresh cilantro, and lime juice

Instructions

  1. Remove stem from cauliflower head and run through food processor and chop into small pieces. It will look like rice grains. 
  2. Julienne bell pepper and onions. 

  3. To start the rice heat olive oil on a skillet and sauté onions and garlic until translucent. 
  4. Add cauliflower rice and sauté until it cooks through. 

  5. While Sautéing the rice stir in cumin, paprika, and salt. Garnish with fresh cilantro. 

  6. While rice is cooking, heat up olive oil in cooking pan and sauté fajita veggies. 

  7. Season with garlic powder, salt and pepper while it's cooking. 

  8. Using serving bowls layer your burrito bowls. Start with cauliflower rice, then add all other fixins over it.
